Roast Beef with Coffee
Yes,this recipe sounds " interesting" due to the coffee and vinegar. I am here to tell you that this has to be some of the best roast ever. It's a good savory taste but is a clean light dish, as sometimes roast recipes are a little too rich for me. I generally followed the instructions except a few tweaks here and there. I will be serving this again!

Pineapple Pork Chop Suey
I tried this recipe recently and thought it was fairly good. I found the "sauce" a little too thick, maybe reduce the flour in the liquid mix. Also, the addition of red pepper chili flakes helped round out the sweetness. Over all I was pleased with the dish and will be making it again.

Skillet Ham, Cabbage and Potatoes
I really liked this recipe, it was simple and comforting. It also works well with ready made sausage. I found that adding a 1 or 2 genorous spoons of spicy mustard and a tiny bit more water makes for a very tasty dish.
