Classic Bran Muffins
I followed other suggestions and substituted apple sauce for the oil and used low fat buttermilk. I put dried cranberries, blueberries and chopped prunes. They turned out great.

Roast Sticky Chicken-Rotisserie Style
I was looking for a marinade for my skinless chicken thighs and found this recipe. I used the rub on the thighs and chopped onion and tossed with the thighs and let sit in the fridge for 4 hours. Then I bbq'd the thighs. OMG delicious. My husband loved them. Will make again and again.

Spiced Sweet Roasted Red Pepper Hummus
I used the regular hummus recipe on this site and tried this for a change...very tasty. Although I made half of it regular and the other half with roasted red peppers. Yum. A little tip if you dont use up all your roasted peppers in the jar. You can place them on a cookie sheet individually, freeze them and put in a zip lok bag for a later use.
