Green Chile Chicken Soup

I used 2 cups of NM green chile and added an additional cup of chicken broth, an additional cup of milk and 1 cup of heavy whipping cream. It tasted great and I will be making again. A very warm and creamy soup for a cold evening. Next time I may add some diced onion.

Pumpkin Crunch Parfaits

I made this for a Halloween potluck and all my coworkers went crazy over it. I do not like the taste of gingersnaps so I used vanilla wafers instead. It tasted awesome and I am planning on making it again for Thanksgiving. I served it in a large bowl instead of parfait glasses and it fed more than 6 people.

Watermelon Cooler Slushy

I left out the salt and sweetened it with honey instead of sugar. It tasted like a Watermelon Limeade! I may take the suggestion of others and add flavored vodka or Midori next time I make it.

I made this for my boyfriend tonight and he loved it. He ate it on a tostada shell with mayonnaise. He had four of them! I made it exactly as the recipe stated without any changes.

Baked Lemon Chicken

My son and I had this for dinner last night. I used boneless, skinless chicken tenders instead of breasts. I used an entire lemon and italian breadcrumbs and it came out awesome! We ate this with a side dish of broccoli that I baked in the oven sprinkled with a little olive oil, sea salt and lemon juice.

Jalepeno Cheese Dip

I made this for my mom's birthday. I used monterrey jack cheese and 5 jalapenos because we like spicy. I mixed 3 of the jalapenos within the cheese mixture and sprinkled the other two on top. I also added a white onion and tomato. I baked it in a ceramic dish for about 35 minutes because at 25 minutes the center of the dip was not melted enough. It tasted better than I thought it would. I will absolutely make this again.

Lemon Pepper Pasta

My son and I both enjoyed this recipe. I added extra lemon juice and used lemon pepper. We also added shrimp and topped it with red pepper flakes and parmesan. It was very easy to prepare.

Eggplant with Mushroom Stuffing

This was the first time I have tried eggplant. I used low-fat butter, italian style bread crumbs, a cup each of the mushrooms and parsley, and parmesan instead of Swiss cheese. Also I added a tablespoon of extra virgin olive oil in the pan when I sauteed the onions and muchrooms. It came out delicious and I cannot wait to try more recipes for this fabulous vegetable!

Spinach and Pasta Shells

I made this one with whole wheat pasta and it tasted great. I cut the amount of pasta in half and used 9 oz of fresh spinach. I didn't boil my spinach; instead I sauteed it with the garlic and red pepper flakes. The only other change I made is adding freshly grated parmesan cheese on top. I will make this again.

Garlic Pita Bread Bites

I just popped these out of the oven and had to rate them right away. Delicious!!! They were so easy to prepare. I used whole wheat pita bread. I am taking them to work tomorrow to dip in hummus for lunch. What a wonderful (and healthy) alternative to greasy chips!

Asparagus Oregenato

I followed the advice of others and cut the bread crumbs in half but next time I will cut it down even more, to a 1/2 cup of crumbs. The taste was ok but not great. I prefer baking my asparagus with a drizzle of olive oil and a pinch of salt and pepper. I may make this again to see how it comes out with less bread crumbs.

Chickpea and Couscous Delight

This was my very first couscous experience and now I am addicted! I followed the recipe exactly and it came out very good. The tomatoes and cucumbers make it a refreshing meal. I did double up on the olive oil only because I love the flavor of it.

Cinnamon-Honey Grapefruit

My coworker gave me about a dozen very tart grapefruits from his tree. They were going to go bad because they were too sour to eat on their own. I decided to see what recipes were on this site and came across this one. I followed the recipe exactly and added about a tablespoon of brown sugar on each half. I broiled it for 4 minutes and it came out perfectly. The sweetness definitely overpowers the tartness of the grapefruit. Yum-O!

Lemony Quinoa

This is the first time I have eaten quinoa and it was a wonderful experience! I did make a few adjustments. I do not like pine nuts or celery so I omitted those ingredients. I was out of parsley so I used fresh spinach. I don't really care for the taste of cumin so I used just a pinch of it. It tasted amazing! Next time I am going to try it with parsley and I am sure it will be just as good if not better.

Amazing Chicken

So easy to prepare and absolutely delicious! My entire family was impressed and couldn't believe it only has 3 ingredients. The italian flavored bread crumbs give it an awesome flavor. I seasoned my chicken tenders with sea salt and a little pepper before dipping them in the mayo. I will make this again for sure!

This was very good and so easy to make! I used a dozen chicken tenders and baked in the oven for 45 minutes. I ate baked asparagus on the side and it was super yummy!

Garlic Red Potatoes

Very good taste although next time I will only use half a lemon. I had to bake it for about 10 minutes longer than suggested to cook the potatoes through.
