About this Cook
I was born and raised in Minneapolis. I have lived in MN, MI, WI, IA, NC, SC and FL. I cooked for my family for 40 years. I learned by trial and error and by reading recipes and cookbooks.
My favorite things to cook
One of my most favorite things to cook is soup. There's an endless variety of combinations and flavors. I also now love quick, easy and light dishes and salads and homemade dressings.
My favorite family cooking traditions
One of my favorite family traditions would be appetizers and finger foods on Christmas Eve.
My cooking tragedies
When we first moved to South Carolina, I tried collard greens and blackeyed peas for New Year's Day (a southern tradition). That probably was not my greatest moment.

Quick Lemon Poppy Seed Bread
These are delicious. Here's an idea that I use and may be helpful to those who don't want to make a full size recipe. I mix all the dry ingredients together and then divide them into 4 plastic bags. When I'm ready to bake a few muffins I spray a mini muffin tin w/ non-stick spray. Add 1 egg, 1/8 cup oil, 1/8 cup water and 1/8 cup lemon juice to the dry mix. Fill cups about 2/3 full and bake 18-20 minutes. Yield: about 14 mini muffins. Perfect for me.

Thai Cucumber Salad
This was absolutely wonderful. I love it! I have never had Thai Cucumber Salad, but it sounded so good and I was craving cucumbers. I even forgot to drain the cucumbers and it was still so delicious. I added 1/2 of a thinly sliced red onion and a handful of fresh dill weed like some others suggested and I used 3 small jalepeno peppers, sliced very thin. Thank you for this wonderful recipe.

Irish Bacon And Cabbage Soup
This is absolutely wonderful soup just the way it's written and I hate it when people try to rewrite someone's recipe, so just consider this a variation of this excellent soup: The last time I made it, I used regular bacon and after that was sauted, I added onion & celery and cooked it for about 10-15 minutes. Then I added the potatoes and browned them slightly. Then I added the bouillon, tomatoes, 1 small regular green cabbage and salt & pepper and simmered it for about 20-30 minutes. Lastly, I stirred in a can of mixed beans (pinto & great northern) and simmered it until it was heated through. Delicious. I think also, cumin would be good in this.
