About this Cook
My mother was an amazing cook as well as my grandmother, the only problem was my mom became too ill to show me her tricks of the trade. I started cooking when I was 12 and mainly learned how to cook by myself. When I was younger I would stand for hours in the kitchen watching my mother or grandmother cook, I remembered a few things. Over the years I have fallen in love with cookbooks, food tv and this website!! I love trying new recipies with my family.
My favorite things to cook
I love to cook chicken and pasta dishes and I really enjoy baking.
My favorite family cooking traditions
I love to cook big meals especially around the holidays or if family comes in from out of town. I enjoy entertaining guests. I especially love cooking "comfort" food.
My cooking triumphs
My husband LOVES my lasagna and raves about it to his friends
My cooking tragedies
I have yet to master Key Lime Pie...

Pumpkin Nut Muffins
I made these for my daughter's Girl Scout meeting snack. All the girls and the moms enjoyed them very much! They were very moist and delicious! Will be making them again very soon!

Poblano Chicken Enchilada Casserole
We did not love this dish. I had very high hopes and was very disappointed. The taste was very bland, and not at all spicy like I thought it would be. We ended up covering it in salsa for flavor. I should have taken the advice of others and used fajita seasoning. I don't plan to make this again :(
