Gourmet Mushroom Risotto
My first risotto! Loved this. I think I cooked it on too high of a heat because the liquid kept boiling off. Used 10 cups of broth before it was finished. Anyway, the end result was amazing. Will make again and often!

Leftover Chicken Croquettes
Such a clever recipe. I never thought about making my leftovers into croqettes! Very tasty.

Nutty Goat Cheese Bites
Will make again! Even my father who would never eat something called "goat cheese" loved them (told him later). Next time, I would really load up on the cheese. I thought I had enough, but more would be better.
