Apple Cake VII
About this Cook
As you may tell by my nickname, I'm a grandmother. It's always a challenge to keep up with the likes and dislikes of the grandsons as their tastes seem to change each time they visit. We like to take walks, watch movies and of course enjoy meals together with them.
My favorite things to cook
I can't really decide... I like making cookies and pies but I also like to make casseroles such as chicken florentine or macaroni and cheese, soups are favorites in the fall and winter.
My favorite family cooking traditions
My stuffed mushroom recipe has been handed down to my son and we all love that at any family gathering. I like to make favorite foods for my favorite people so when I find out what their favorites are they can count on getting them.
My cooking triumphs
I created my own stuffed mushroom recipe, a very quick and wonderful corn chowder. My best and favorite company casserole is chicken florentine.
My cooking tragedies
We have a steak marinade we love to use for summer grilling. It was past that date so I tried frying marinated steaks and it was more like boiling them. That didn't work out at all.

Homemade Pancake Syrup
I asked my littlest grandson if he would like (his favorite) pancakes for breakfast before I realized we had no syrup. I didn't want to disappoint him or go to the store as we are a bit off the beaten path. I came to allrecipes to look for help and found this recipe which had ingredients I had on hand except the maple flavoring. We had a bit of pure Maine maple syrup left over from our trip to the farm on Maine Maple Sunday so I used a bit of that instead. That was the only substitution; the rest I followed exactly. My gradson and boyfriend loved it! I don't think they will let me buy it again! We love your recipe and next time I will have the maple flavoring on hand! Thanks!

Apple Cake VII
This is a moist cake. This recipe gets all 5 stars because everyone loved it as is and no one said it was 'too sweet'. I just didn't grate the apples, I only chopped them. I am making a note to myself that the apples should be large. We all loved the brown sugar sauce which I did change just a bit as I had no brandy... I put butterscotch schnapps and it was good.

Awesome Carrot Cake with Cream Cheese Frosting
The flavor is great. I did wonder why so many people change a recipe before they tried it as written. I didn't expect it to be health food; just a moist carrot cake. This cake is indeed moist, but upon sitting on a paper plate for a day, (kept some and sent the rest with the birthday girl) quite a bit of oil was on the plate. That makes me believe that the cake may have a bit too much oil so next time I make it-and there will be a next time-I will try a little less oil (maybe try just one cup instead of one and a half) to see how that works. I turned the cake upside down to frost and found the amount of frosting to work great. This is the first carrot cake I have ever made but it won't be my last! Thanks!
