Green Bell Peppers stuffed with Tomato Lentil Couscous
This is a great basic recipe for stuffed peppers. We made them with garlic & olive oil couscous because that's what we had in our cupboard. I have to say, while we were eating them we started coming up with all sorts of fun ideas for how to make them better, because while the filling was a nice texture, it was lacking a certain..."pizazz" that we like. Also, the peppers weren't cooked enough even though we cooked them almost twice as long as the recipe called for, adding the cheese at the very end. Next time I will definitely take the peppers out to the grill first and roast them up a bit.

Best Big, Fat, Chewy Chocolate Chip Cookie
AT LAST!!!! I have bought entire cookbooks dedicated to finding the perfect chocolate chip cookie recipe and never found quite the right one. I jumped on to the trusty ol' allrecipes.com after getting frustrated with a batch-gone-bad, made from the recipe on the bag of chocolate chips. I have made them 3 times now, and they're always a huge hit. They're the perfect mixture of chewy centers with just the perfect thin layer of crispiness around the outside. You should see the kids' faces when you hand them this enormous cookie, too. I followed everyone's advice and refrigerated the dough between batches, and even for a few minutes before I throw the first batch in...probably because melting the butter made me nervous that they would spread too much. This is by far the best recipe I have found for chocolate chip cookies, EVER!

Pani Popo (Hawaiian Coconut Bread)
My sister and I just made this and it was perfect! My hubby is Samoan and her boyfriend is Tongan so we've both grown accustomed to the Polynesian foods at family gatherings... but we've never tried to make it ourselves. Both my husband and her boyfriend were very pleased with the outcome. The only thing we changed was that we added some grated coconut to the sauce. Yummy!
