Libby's® Pumpkin Roll with Cream Cheese Filling

This was my very first attempt at making a rolled cake so I was a little apprehensive especially when it came to flipping the cake onto the towel. Everything turned out well! The taste of the cake was too mild for me, so next time I'll add more pumpkin spice to the dry ingredients. Everyone was happy with the end product!

Coconut Bread Pudding

This was my first time making a bread pudding, and it turned out great. I took it to our chuch potluck, and brought the pan home empty! I didn't have fresh coconut, so just used flaked. I will definitely make this again!

These bars were really good. I cut down on the peanut butter and added chopped roasted peanuts and chocolate chips to the batter, then sprinkled the same on top prior to baking. I drizzled some ganache to dress them up a bit.

Onion Potato Rolls

These rolls were so good! I cut the wheat flour to one cup and decreased the sugar to 3 tablespoons. I sauteed the onions (instead of using dried) a little too long so they came out dark, but still tasted good nonetheless.

Chocolate Cookie Cheesecake

Not only did this cheesecake look pretty, it also tasted so delicious! This was the first time I baked with Splenda, and no one could tell; it tasted so rich! This is an awesome recipe!

Banana Oat Muffins

These muffins have great flavor and texture. I wished they rose a little higher, though. I cut the butter to 1/4 cup and sugar to 1/2 cup, and they were still plenty moist and sweet with the crunchy topping.

Best Ever Cheesecake

This recipe was the best cheesecake I've ever made! I dressed it up by adding shaved chocolate and sliced strawberries along the outer edge. I'm throwing my old cheesecake recipe out!!

Three Hundred Chocolate Chip Cookies

I can't say enougfh about this newly-discovered chocolate chip cookie recipe! The edges of the cookie turned out with just the right amount of crunch while the center was soft and baked to perfection! I changed the recipe amount to 12 servings and it yielded 3 dozen cookies which is just the right amount for our family! These cookies were awesome!!

Fresh Strawberry Pie I

This is the very first recipe on this site that I did not like. I followed the recipe exactly as written, and I was disappointed with the results. The glaze was nice and clear while it was warm, but then turned opaque and rubbery when it cooled. I will not be making this again.

Brownie Caramel Cheesecake

This recipe was so delicious! I followed the recipe as printed, and even though everyone loved it at work and it looked beautiful, the next time I make it, I'll make the adjustments other reviewers suggested. The brownie layer turned out moist, and I would've liked a bigger cheesecake layer, so I'll use three blocks of cream cheese instead of two, as others suggested. I'll also used melted chocolate as a drizzle instead of Hershey's chocolate syrup (what I had on hand) which was too thin and runny. To make a "lighter" version, I used Egg Beaters in the brownie and cheesecake layers, fat-free evaporated milk in the caramel sauce, and lower-fat cream cheese. With these changes, it tasted just as rich and decadent (and without all the guilt)! I will definitely make it again!

Balsamic Chicken Breasts

This recipe was very quick and easy. I sauted chopped onions and browned the seasoned chicken. I also added pineapple apricot preserves to the balsamic vinegar, then reduced the sauce. I omitted the sweet potatoes. It was very yummy!

Roasted Garlic Mashed Potatoes

These mashed potatoes were the best. I used 2% milk and "I Can't Believe It's Not Butter" butter, to lower the calories. They were so creamy and rich-tasting! I'll definitely make them over and over again!!

Awesome Slow Cooker Pot Roast

The pot roast turned out amazing! It was so full of flavor and very tender. I cooked it on low for 6 hours. We had just returned from a late lunch of baby back ribs, and my husband had to sample it! He had three bites before finally pulling himself away from the counter! It's an absolutely wonderful, easy recipe!

Cookie Balls

I made these for the first time and the first couple of balls were slow until I got the hang of dipping them in melted chocolate. I chilled them first as some reviewers suggested, then used a wooden toothpick instead of a fork to dip them. I submerged the ball almost all the way to the toothpick (revealing some of the dough), then used a second toothpick to remove the ball. Then I smoothed over the little "dent" on the top of the ball with a small touch of chocolate. Perfecto! The results were wonderful! I can't wait to bring them to work tomorrow! Thank you for a great-looking confection!

Health Nut Blueberry Muffins

These muffins were so delicious! To cut down on the calories even yet, I used fat-free plain yogurt instead of the buttermilk and substituted EggBeaters for the egg. I'll be making these again and again!
