Microwave Macaroni and Cheese

I was looking for a quick and easy way to make mac and cheese with what I had on hand, and I was very surprised at how good this turned out. I used shredded cheddar because I did not have any processed cheese. I'd recommend using real cheese if possible, to avoid the 'boxed' taste some people mentioned. The onions made this taste close to traditional oven baked mac and cheese. The second time I made this I added some minced garlic with the onions to saute and added a scoop of sour cream at the end, which made it very creamy and good!

Tacos in Pasta Shells

Wonderful recipe! A new favorite. Can't express how much I loved it! I used taco seasoning instead of just chili powder, and Mexican blend cheese instead of cheddar and jack. I used enchilada sauce(because I love the stuff) in addition to the taco sauce. I omitted the tortilla chips (didn't have any) and honestly think I wouldn't have liked the crunch with this dish. Topped with green onions and served with refried beans.

Buffalo Chicken Soup

I'm surprised this doesn't have more reviews. I left out the celery, because I hate the stuff. And oregano is suitable spice to add in with your salt and pepper. This is a very good base, loved the kick from the buffalo sauce. I will use it again, and maybe add some brocolli or potatoes. It really is wonderful.

Broiled Tilapia Parmesan

I did not have celery salt on hand, so I subbed it for garlic powder (can never have enough garlic). I only had the shaker can kind of Parm on hand, and I think that the real stuff would have been better. Regardless, I really liked how this turned out and will make it again!

Tender Italian Baked Chicken

Didn't change a thing. Loved it! This was so easy to make and goes with just about anything. I was skeptical about the mayo at first, b/c I don't like the taste, but you really can't tell once it's been cooked. So don't be scared off by that. :)

Roasted Brussels Sprouts

These are delicious! I thought that with the basic ingredients these would taste like plain old brussels sprouts, but the roasting really brings out a wonderful flavor! Thanks for sharing a new way to make them.

Alfredo Mostaccioli

Yumm! I used dried parsley since I didn't have any fresh on hand. I would recommend penne pasta since the groves on it hold sauce better. This sauce was delicious and so easy to make! I'll definitely make it again! I can't wait to try it with variations of pasta shapes and maybe add some chicken, peas, and mushrooms. There are many possibilities!

Jalapeno Popper Spread

Amazing!! I used both cheddar and parmesan cheese. I also left out the chilies and added more jalapenos to make up the difference. Just a matter of personal preference. Do not pass this one by!

Old Fashioned Fudge Cookies

These are very good! I was looking a recipe to mimic some storebought cookies I tried and loved, and this is it! They were gooey right out of the oven, but then dried out pretty fast. If you want them softer, just pop them in the microwave!

Slow Cooker Lemon Garlic Chicken II

I used 1 cup of chicken broth instead of boullion. The only problem with this recipe was that there wasn't enough! Goes great with rosemary or thyme new potatoes.

Awesome Roast Beef

'Awesome' is right! This recipe needs absolutely NO changes! I do typically tenderize my roast with mustard and season with salt, pepper, and garlic powder, and it worked fine with this recipe. Very tender! You've GOT to have mashed potatoes on hand to go with the delicious gravy! This is now my go-to recipe for Roast Beef. Ladies, make this for your boyfriend and he will propose!

Grilled Salmon I

I don't have a grill, so I simmered the salmon in the soy sauce mixture for about 10 minutes. This is the best salmon I have ever had, and I've had alot seeing as I have family in Alaska. This is going to be a kitchen staple from now on.

Salsa Chicken Burrito Filling

This recipe was yummy! I left out the cumin and chili powder because the taco seasoning had plenty of spices in it already. I packed this up with some taco toppings for a picnic. A great, fun meal. Even better the next day!

Mom's Chocolate Chip Cookies

I added 3/4 cup chopped walnuts to my cookies. I've been making my cookies with pudding mix now, and was looking for a simple choc chip recipe. I will never make cookies without pudding mix in them again, it makes them so moist and soft, just the way I like!

AH-MAY-ZING!!! These were super thick, so have milk on hand! I used no calorie sugar for some of the sugar, but used the same amounts of every ingredient. DO NOT SUB anything! They are great!

Best Beef and Broccoli

I was iffy about this recipe because of other reviews that had changed so much. I added some garlic salt and a little less onion than called for and it turned out to be delicious! I would recommend making few changes to this recipe. Serve with rice and you won't be disappointed! It tasted better than the Chinese buffet stuff I love so much!

Creamy Lemon Chicken Soup

I made this without the carrots or onion. I was very surprised to find that it tasted very much like the baked chicken soup from Demos', a local Middle TN restaurant. I have been wanting their recpe for years, and this comes so close, I will definately use it again!

Creamy Chicken and Rice

Great recipe! I hate boiled rice, but the sauce gave it so much flavor. The only negative thing is that when this dish cools it gets very thick. I think it tastes even better reheated.

Creamy Au Gratin Potatoes

This recipe was amazing! I cooked it for my boyfriend who said he didn't like potatoes au gratin, and he loved every bite of this! I took user suggestions and sauteed the onions in garlic for 5 min before adding. I also topped it with Ritz crackers and Parmesan cheese for the last 15 minutes. I have been trying to find a recipe for "cheese potatoes" that my mom used to make, and this is the closest I've come.
