Raspberry Lemon Muffins

I didnt have any lemon zest, so I used a full teaspoon of lemon extract. Subbed 1 whole egg for the egg whites. Used plain yogurt, which was what I had on hand. These are not very sweet, so don't skip the sugar on top. It gives a perfect crunchy and sweet balance to the not-so sweet muffin. Great to keep on hand in the freezer since they taste fresh baked after 30 seconds or so in the microwave.

Lemon Graham Squares

I was really excited for these since I LOVE graham cracker crumbs, but having made these I'm with the reviewers who stated there is too much of it in these bars. These would be 5 stars with just a bit less crumbs. Otherwise, delicious recipe.

Honey Mustard Sauce

Despite this sauce being mostly mayonnaise, I didn't feel the mayo taste was overwhelming. I only had a little bit of dijon mustard, so I subbed Plochman's mustard for part of the dijon called for. I wouldn't change anything about the ratios here; I think it's just perfect as written. Thanks!

Broiled Tilapia Parmesan

This was great. I am not sure how closely I followed the recipe, since I was scaling it for just two pieces of fish. I did use all the ingredients, just probably not in the right amounts. I was apprehensive about using too much mayo, so I only used a little bit but I really couldn't taste it at all and I probably could have spread the topping more easily with more in there. I served it atop the Orzo Alfredo recipe from this site, with roasted garlic and a baguette on the side. I also managed to use my broiler without burning the food, so that was a major success. I think next time though I will put some dry seasonings on both sides of the fish before adding the topping to give it a little more flavor. Very easy meal and I'm looking forward to having it again. Boyfriend liked it too.

Orzo Alfredo

This went great with the Broiled Tilapia Parmesan recipe from this site, but as written it's pretty bland. Tasted it as written before adding garlic powder, salt, and white pepper then it was pretty delicious. Used 2% milk since I had no cream.

Fish Tacos

These were delicious. I'd rather eat this than go to a restaurant, and they were fun to make. I found I was out of cumin for the white sauce, so I skipped it and it was still great. Forgot to dredge the fish in flour before frying, and it made no difference. Subbed lettuce for the cabbage. Really delicious recipe, and though I thought it would be time consuming it really took no more work than when I usually make fried fish. The beer batter recipe here isn't the best out there, but it works just fine for the dish. If you want a top-notch beer batter, try the "Beer Batter for Fish" recipe for this site, which includes some more seasoning. But, for how fast and easy the beer batter here was, it works fine.

Beer Margaritas

These are the best. Way better than the pre-mixed bottles of margarita, and hardly any more work to make. I used Corona and Jose Cuervo with generic limeade. The only change I made was to tone it down with extra beer instead of extra water. These will sneak up on you FAST!

Roasted Garlic Soup

SunnyB's awesome pic compelled me to make this, even on the warmest day we've had so far this year. My roommate kind of gave me the side-eye when I told him we were having soup, but he sure seemed happy enough to be eating it. I had pre-peeled cloves and I didn't think I could roast those but found that I could. You just toss the cloves with the oil, make a packet out of foil and put them in a 350 oven for about half an hour. They tasted great and it was faster than roasting them in the bulbs. Skipped the lemon because it seemed perfect as it was when I tasted it. I had leftover garlic mashed potatoes from the previous night so I added some of those too. I skipped the puree step; it looked fine as it was. Very delicious, thank you!

Onion Soup Gratinee

This was amazing. I subbed beef stock for the chicken. Also used some sliced swiss in addition to the cheese called for. I didn't have any port so I subbed more of the white wine. I am a vegetarian, but I made an exception for this soup since my grandpa requested it. I'll try it again with veggie stock soon. Superior to restaurant quality.

Strawberry Bread

This smelled soooooo good baking. I was not disapointed with the taste either. Skipped the pecans for this one. The instructions could have been a little more detailed (note that you're adding the REMAINING sugar to the dry mixture, not 2 cups) but everything worked fine. I added about an extra 1/2 pint of strawberries to this. I may try with strawberry extract next time.

Braided Easter Egg Bread

This recipe turned out beautiful. I used my bread machine for the dough. I could have done a better job braiding the dough, but once it's baked it hardly seemed to make a difference. Looked beautiful. One star off for the baking time...50-55 minutes?! I am really glad I read the reviews otherwise I would have probably set a timer for say, 40 minutes or so and the bread would have already been really burned. Mine took about 25 minutes.

Apple Dip

We actually used this dip for strawberries. It seemed like you need a lighter type of dip for that than you would for apples, so I folded in a bit of cool whip. Yum. Tasted it before the cool whip though, and I could tell this would be delicious with apples. I always have cream cheese so this one's a keeper for me. Thanks!

Grilled Peanut Butter and Jelly Sandwich

These are the best. I always use nice texas toast style white bread for these. Last night I made these with raspberry jelly and also made grilled sandwiches with Nutella and banana. My roommate and I devoured them. Definitely recommend that you try these with Nutella if you haven't already.

Nacho Cheese Sauce

I was very happy with this recipe. The creaminess from the American cheese is great, better results than you can get with "real" cheese I think. I served it with fries, but sampled a bit with a tortilla chip and liked it that way too. It didn't blow me away with its amazingness (maybe just more cheese was needed?), so not quite 5 stars for me but very easy and all the ingredients are basics which I love. I think I will try this with salsa added next time.

Creamiest Rice Pudding

Unfortunately, this recipe didn't make pudding for me. I follwed the recipe exactly, letting it simmer and stirring frequently. I used whole milk. Having read more reviews now I can see that the 1 hour time on the stove wasn't sufficient for many people. But the recipe is poorly written; it gives you no help as to what the pudding should look like after the one hour, doesn't instruct you to keep cooking if you havent reached a particular consistency. So I just proceeded with the recipe and ended up with all liquid. I'm planning on putting it back on the stove to see if I can salvage it but as written this is pretty much a zero star recipe for me.

Healthy Banana Cookies

I liked these a whole lot more than I expected to and was not expecting to leave a 5 star review. I am not big into health food, but these are yummy. I did of course make them a little less healthy, by adding 1/2 cup of chocolate chips and 1/2 a cup of walnuts in place of the dates, but still these are good for you. I also added a few heaping tablespoons of peanut butter which I may increase next time to give them more protein and a peanut butter/ banana taste. Other reviewers have mentioned this but I didn't read them before making: these cookies will not spread AT ALL so flatten them out before you put them in the oven. Oh and also...my banannas were not ripe, so I called my mom to ask her what to do. She told me to put them in the microwave. I did, for about 45 seconds or so. It worked great and they mashed easily! I'll be sending these to my little sister at college, and hopefully they'll be a good study snack for her.

Lemon Sugar Cookies

These are pretty yummy. Cut-out cookies are a major FAIL for me so I made these as drop cookies. I also didn't have to chill the dough since I made them this way. I was a little short on juice so I added a splash of lemon extract too. Thought they could have used a little more visual appeal so I made some colored sugar (1/4 cup of sugar in a ziploc, 4 drops of yellow food coloring or so, shook it all together) and sprinkled them with that which I thought was pretty cute! I would call these 4 stars but I'm taking away one star for a problem in the ingredients called for. This calls for lemon peel. I'm sure most who frequent this site know that you want to use the ZEST (the colored, oily, outside part of the peel) not the whole peel itself. They're not the same thing, and that mistake could certainly cause confusion for some beginners.
