Chicken Wild Rice Soup I

Great recipe! I froze mine in widemouth Mason jars for quick dinners and lunches. I added a teaspoon of thyme leaf at the end because I thought it needed a little zing of citrusy flavor to it. But great over all.

Pimento Cheese Spread II

If you're looking for the pimento cheese eaten in the Southern US, this is NOT it! To make the "classic" spread, omit the nuts, add just a dash of hot sauce (for flavor, not heat), and 1/4 teaspoon of garlic powder. It will keep for weeks in the fridge and makes a great sandwich. Also good melted over tortilla chips.

Simple Macaroni Salad

Super delicious! I used ranch dressing mix since I didn't have any soup mix on hand. Like other users added sour cream, I added nonfat yogurt for extra tang. Thanks for sharing!

Smooth Sweet Tea

Super sweet, just like it is made in Georgia and Alabama. I used RED ROSE tea bags because they are cheap and multipurpose...I'd recommend only using 4-5 and steeping for only about 10 minutes. The black tea flavor is very strong otherwise (but still good).

Plum Blueberry Upside Down Cake

Wow, this was sooooooo good! This was probably my favorite cake ever--the cake texture was great and the slightly tart plums balanced nicely with the super-sweet syrup. I didn't use blueberries and I loaded up the pan with lots of plums. I doubled the brown sugar/butter mixture and added 1tsp of fresh lemon zest to the cake batter.

Jamaican Beans and Rice Dish

The liquid proportions for this recipe are wrong. I used 3 cans of coconut milk. I dumped everything into my rice cooker and set it to the brown rice setting. Once cooked, it was really lacking in flavor so I added all the seasonings in again. This dish has subtle flavor and was a good counterpart to the Jerky Chicken recipe on this site.

A Jerky Chicken

My, oh my was this good. I doubled the marinade and did half on chicken pieces and half on slices of portabello mushrooms. Both were fabulous. There wasn't much marinade left over to use as a dip so I mixed in an equal amount of plain yogurt--soooooooooooooooo good! I highly recommend that you try this for a dip. It would be good on anything!

Vegetarian Tortilla Soup

With a few modifications this soup turned out FANTASTIC! I made the soup for a group of 50, following the directions exactly until the end when I adjusted it to taste the way I wanted it to. I ended up removing it from heat and pureeing in batches in a food processor. I return to the pot and added tomato paste until it was as thick as I wanted. Then I let it simmer for another 30 minutes. I also increased the cumin by almost 50%. SO GOOD!

Mediterranean Black Olive Bread

This is a great recipe! I've tried lots of different olives in it and prefer the oil packed olives since their extra oil really makes the bread moist. Also, with proper kneading the bread bakes up almost spherically. It looks like a giant puff-ball mushroom!

Curried Pumpkin Soup

With a few modifications suggested by other users, this soup turned out FANTASTIC! Instead of canned pumpkin I used the flesh of 2 large roasted acorn squash that I've had as a centerpiece on my table since Thanksgiving. Totally worked. I doubled the curry powder and omitted the sugar. Topped with plain yogurt this stuff is amazing.

Bean Soup With Kale

YUMMY! I made this soup last night using a combination of turnip, collard, and mustard greens fresh from our garden, along with a quart of canned tomatoes from this past summer. I also added about 1/4 teaspoon of cayenne pepper, as suggested by another reviewer. Other than that I followed the recipe exactly (with all that garlic!). I don't know if it would be as good with kale since that green has less pungent flavor than the greens I used--with the combo I used the soup had many LEVELS of flavor!
