Quinoa and Black Beans
This is, hands down, the best quinoa recipe I have ever tried! The spices are fantastic. I add a chopped red pepper and kick up the spices a bit to suit my palate, but it's just as good when it's a bit bland.

Salsa Chicken Rice Casserole
Delicious comfort food at it's best. I didn't find a need to change this recipe, beyond browning the chicken instead of boiling it (ick!). It's not something I'd make every day, but sometimes, you just need a good, hearty casserole to make the day go away. :D

Strawberry Dream Cake I
This cake was a hit with my family! Everyone wanted more. We found that the cake tasted MUCH better cold, straight from the fridge. Next time, I would make the frosting with less whipped topping to make it easier to frost with - it was very thin, but delicious.
