World's Best Lasagna

While I can't say for certain whether this is the world's best lasagna, I won't hesitate to say that it's the best lasagna I've ever had. Despite a few changes (ground turkey instead of beef, didn't have any fennel and was a bit short on crushed tomatoes) this recipe turned out fantastic! It's definitely worth the time and effort.

Phyllo-wrapped Halibut Fillets with Lemon Scallion Sauce

This is a very popular recipe with my family and friends - everyone I serve this to wants the recipe! The phyllo dough keeps the halibut fillets incredibly moist, while adding a nice crunch, and the lemon sauce really complements the halibut well. These also make good leftovers - just cool the fillets completely on a rack (they need to be completely cooled before you store them or they get soggy) and store in an airtight container. Reheat them in the oven (I use a toaster oven).

Blackened Chicken Pizza with Yellow Tomato Salsa

This is one of my favorite recipes! I love the many flavors and it has a great kick to it. The blackened chicken is also good just by itself. I can never seem to find yellow tomatoes, so I usually just use Roma tomatoes and it still turns out great.

Playgroup Granola Bars

Very good and flexible recipe. I vary the granola bars depending on what I have on hand and my mood, for example, adding peanut butter or walnuts and dried cranberries. Be creative with these!

Excellent. I used this recipe to make cupcakes and changed the baking time to 20 minutes. I replaced half of the butter with unsweetened applesauce to reduce the fat content (which was not terribly high to begin with). The resulting cupcakes were moist, light and flavorful and lower in calories and fat than most chocolate cake recipes.

Greek Lemon Chicken Soup

This soup was good, but didn't come anywhere close to the lemon-chicken soup I've had in Greek restaurants in the past. The only alteration I made was using 4 egg yolks instead of 8. If I make this soup again I will cut the lemon juice in half - I found the lemon to be overpowering. I would also add more rice and perhaps more chicken and vegetables as well to give the soup more substance.

Perfectly Moist Irish Wheaten Bread

This bread was very easy (and fast) to make and the result is excellent! I baked the bread on a cookie sheet and had no trouble with the dough keeping it's shape. The bread is very moist, but not doughy or too dense. The sprinkling of sugar on top gives it a nice hint of sweetness. This bread is great with jam! I will definitely make this recipe again.
