Amazing Pecan Coffee Cake
This recipe produces an absolutely delicious coffee cake! I make it as directed for events, but I crave this so often I’ve also made some changes when I make it for my family. Rather than 1 cup of butter, I use 1/4 cup butter, 3/4 unsweetened applesauce, and slightly increase the amount of light sour cream (~1 1/4 cups). I leave everything else the same. That still produces an amazing, buttery coffee cake, and I don’t feel like I have to have my cholesterol checked afterward ;)

Chicken Tortilla Soup I
This is an EXCELLENT, fast, healthy recipe that everyone raves about! I make this as directed, but I usually skip the hominy out of personal preference, and instead add extra beans. I keep the ingredients for this on hand at all times. After making this the first couple times and having tons of wilted cilantro afterward, I’ve started freezing my cilantro, and using just slightly more than the recipe calls for to compensate for (very minimal) flavor loss from freezing. This soup also freezes well, so I usually double the batch! One of my (and my family’s!) all time FAVORITE recipes!

Soft Oatmeal Raisin Cookies
I needed a great cookie recipe for my dad's birthday and I found one! Since I was making these for the first time on the day of the occasion, I read a lot of the reviews. I made the following changes: added 1/2 tsp allspice, 1/2 tsp cinnamon, and increased the oats to 2 1/2 cups. I also added 1/2 c extra raisins and 1 cup of chopped pecans for my dad. I baked them for 12 minutes for some of the best cookies I've ever made! The fact that they're so much healthier was a HUGE bonus!
