Broccoli and Sausage Cavatelli

I really liked this. The spicy sausage gives it a good flavor and it was a very light pasta dish. I did not have any parmesan, but I would recommend using it. Mine seemed to be lacking something. Good recipe!

Salsa Chicken Rice Casserole

This was a pretty good easy dinner option, plus I was able to make it with what I already had in the house. To make it a little healthier, I halved the amount of cheese, used brown rice and skipped the cream of chicken soup. Turned out great and leftovers are easy to reheat.

Kielbasa with Peppers and Potatoes

This was great. I doubled the meat and skipped the oil. Was good for dinner, but we enjoyed it more as a breakfast dish. Was pretty easy and flavorful. We served it with hot sauce.

Marinated Baked Pork Chops

This recipe turned out pretty good. I'm not a huge fan of pork chops because they always seem bland, but the sauce on these helped that. I did marinate the chops for about 5 hours and then made extra sauce to spread on before cooking.

Eggplant Delight

So I fully admit that I have never cooked eggplant before and probably messed this one up because of user error. The first slices of eggplant I put in the pan soaked up all the oil leaving the pan dry, so I had to add more so they wouldn't burn. Turned out as soggy oil patties. The onions were good though. May take another try to learn how to make this better.

Slow Cooker Tender and Yummy Round Steak

This was simple and had a great flavor. The meat came out very tender. Only changes I made were sprinkling garlic salt over the meat before cooking and including sliced fresh mushrooms.

Southern Potato Salad

This was easy to make and tasted just like the potato salad you get from the deli at the grocery store. Nice thick texture. Family liked it because it had more of a mustard flavor than mayo.

Mom's Zucchini Bread

Really good and made the whole house smell amazing! As suggested by others I used natural applesauce in place of 1/2 the oil and used 1 cup white sugar & 1 cup brown sugar. Mine was cooked perfectly at 55 minutes. Cooked through, but not dry. Family loved it!

Neat Sloppy Joes

Pretty tasty, but a little too sweet for our taste. I will use it again, but probably leave out the brown sugar since the ketchup and soup both already have sugar in them. Very quick easy lunch though and we had all the ingredients on hand.

Filet Mignon with Rich Balsamic Glaze

This was easy to do and turned out beautifully. I made it for Valentines Day and it was a hit. I took other peoples advice to let the steaks sit for 20 minutes out of the fridge before cooking, but then followed the recipe exactly. Very nice dish.

Chantal's New York Cheesecake

This is a fantastic recipe! I have made it twice now for special occasions and everyone loves it! Plus it impresses even the experienced cooks in the family that you can make a homemade cheesecake. This is an easy recipe and turns out so delicious! For the crust, I use 1 1/2 cups crushed graham crackers, 1/4 cup melted butter, 1/2 teaspoon cinnamon & 1/4 cup sugar. The cinnamon just adds a little extra flavor that I like. Make sure your ingredients are at room temperature. I use a hand mixer for the cream cheese and sugar, but then switch to a wooden spoon for the rest of the mixing. After baking for 1 hour, I run a greased knife around the edges of the pan so it won't stick, turn off the oven and leave it in the oven overnight to cool. Then just keep in the fridge until ready to serve. We love this one. Thank you for the recipe!

Vanilla and Chocolate Delight

This is easy and tasty. Not overly impressive as a gourmet dessert, but definately an easy crowd pleaser. I will use it again if I need a quick dessert to take somewhere. My family likes it more when we use pistacio pudding instead of chocolate.

Southern Pecan Pie I

This was awesome! I have never made a pie before, but I attempted this for my boyfriends birthday party and it turned out delicious. So easy to make, just mix it all and put in the oven. I doubled the recipe with no problem and used a ready to cook pastry crust. Loved it!

Quick Chicken with Asparagus and Provolone

This recipe is great! It is so easy to prepare and everyone in the family likes it. I always struggle with making sure chicken is cooked, but not dry. This is moist & flavorful. Only change I made was to use fresh asparagus. I definitely recommend this one!
