Sweet and Sour Chicken III
This was delicious! We were looking for a quick stirfry and this was perfect. We added one chopped red onion & 8 oz of snow peas; due to the extra veggies, we tripled the ingredients for the sauce (except only doubled the soy sauce & pineapple with juice). For some heat, we added a tbsp of Asian garlic chili sauce to the sauce; we also browned the chicken with minced garlic & crushed red pepper flakes. Served over brown rice. Can't wait for the leftovers tomorrow!

Rosemary Ranch Chicken Kabobs
This recipe is a definite keeper! We only had two chicken breasts on hand, so we added baby portabella mushrooms, red bell pepper & onion to the skewers - perfect for two people! We also cooked down the leftover marinade to serve as sauce over kabobs & rice. This was SO delicious & a perfect summer-time recipe for the grill. Will definitely make again & again!

Tantalizingly Tangy Meatloaf
This is such a quick & easy recipe - and a definite keeper. Only made a couple small changes to the original recipe: I substituted ground turkey (as healthier alternative to ground beef) and added a handful of chopped onions to the loaf. Baked for 25 minutes, then added the sauce & baked for another 20 minutes. Had to use apricot/pineapple preserves since I couldn't find just pineapple preserves. And, based on some other commets, I doubled the sauce - and so glad I did. I've been on the search for the perfect meatloaf recipe & this is a definite contender. My boyfriend said this is the best yet!
