wow, it's rare that I like meat loaf... the only other ones I like is my dad's and mother in law's. After making changes to this to fit my tastes, this is now my fav! Even my husband claimed it as his fav and that it beats his mom's recipes, and her's is pretty dang good! What I did:
I used about 2 lbs ground beef, I didn't have any eggs so I just added a bit more milk, used seasoned bread crumbs instead of crackers, added 1 1/2 tsp garlic, didn't have onions so used onion soup mix, and as far as the glaze... I mixed the ketchup and brown sugar together and also added 1 tbsp worcestershire sauce and about 1/4 cup medium salsa; I then spread about 1/3 of the glaze on the bottom, let the loaf bake for about 35 minutes, then spread the rest of the glaze ontop of the loaf, and then let it bake for another 35 minutes... PERFECT!! Goes WONDERFULLY with the roasted red potatoes and asparagus side dish also found on this website.
