About this Cook
I am a wife and mother. Those are the best words to describe me! I love to cook when I have the time, which means I use my crockpot a lot when I am at work! I love to travel and read. I also love to go boating with my husband and our friends. I love the outdoors and love to tend to my garden!
My favorite things to cook
I love to cook Italian dishes as well as Mexican. I also love to try new things on a regular basis. We use our grill all year long (we can do that here in the south!) I love to change it up and add new dishes to our regular meal options.
My favorite family cooking traditions
Growing up there were a few specific things I looked forward to when it came to food. Easter dinner has to be my favorite holiday meal b/c we always had Ham, Potatoe Salad, Deviled eggs, Baked Beans and such. It was like the pre-summer meal and it always made me realize that school was almost out and my favorite season, Summer, was just around the corner. I have continued this tradition with my own family!
My cooking triumphs
Most recently many dishes that I have taken to get togethers have been praised! I am so proud when people are asking time after time for my recipes! How exciting!
My cooking tragedies
I am a terrible baker! I always burn cookies! Guess I need to practice more! And grilled cheese is impossible for me!

Tortilla Rollups II
Brought these to work for our Halloween luncheon. Made exactly as written with the exception of using Burrito size Tortillas. This made three wraps which I cut into about 24 small rolls. These were a hit and were gone in about 5 minutes! Definitely a keeper!

Scrambled Egg Muffins
These are excellent!!!! I made a split batch of these doing 6 ham/green pepper/cheddar and 6 bacon/jalapeno/cheddar. I placed in individual ziploc bags and placed in the freezer. I pop them in the microwave for 1 minute wrapped in a paper towel and they turn out wonderful! What a great on the go breakfast! I love the change up from my usual Oatmeal or Bagel! Thanks!

Chicken Enchiladas IV
The filling in these enchiladas was a bit bland for me. I will probably add some other ingredients/spices next time to liven it up! I used shredded grilled chicken breast that had chipotle lime seasoning on them from a few nights before. Will try again with my own personal modifications. Thanks!
