About this Cook
I am a wife and mother. Those are the best words to describe me! I love to cook when I have the time, which means I use my crockpot a lot when I am at work! I love to travel and read. I also love to go boating with my husband and our friends. I love the outdoors and love to tend to my garden!
My favorite things to cook
I love to cook Italian dishes as well as Mexican. I also love to try new things on a regular basis. We use our grill all year long (we can do that here in the south!) I love to change it up and add new dishes to our regular meal options.
My favorite family cooking traditions
Growing up there were a few specific things I looked forward to when it came to food. Easter dinner has to be my favorite holiday meal b/c we always had Ham, Potatoe Salad, Deviled eggs, Baked Beans and such. It was like the pre-summer meal and it always made me realize that school was almost out and my favorite season, Summer, was just around the corner. I have continued this tradition with my own family!
My cooking triumphs
Most recently many dishes that I have taken to get togethers have been praised! I am so proud when people are asking time after time for my recipes! How exciting!
My cooking tragedies
I am a terrible baker! I always burn cookies! Guess I need to practice more! And grilled cheese is impossible for me!

Quick Black Beans and Rice
I enjoyed this! I took the advice of other reviewers and used minced garlic in place of powder which I sauteed with the onion in olive oil. Also added some jarred jalapeno with it. Added tomatoes, beans and cumin for flavor. Very easy and delicious! Will make great leftovers in a burrito I am sure!

Honey-Mustard Salad Dressing
Delicious! Substituted Dijon for yellow mustard, organic cider vinegar for the white, onion powder for fresh onion, olive oil for the veggie and dry parsley for fresh. I put this on a baby spinach salad with hard boiled eggs and bacon. YUM!!!! Will definitely keep this in the fridge!

Zippy Summer Shrimp
These were very good! Quick and easy! Only made substitution of lime juice for the lemon. These were really delicious leftover cold on top of a salad!
