Creamy Penne Pasta

I swapped the measurements of oregano and parsley to 1/4 cup chopped parsley and 2 tablespoons chopped oregano. 1/4 cup of oregano is a LOT for my tastes! With that change this is a tasty comfort dish.

Finnish Kropser (Baked Pancakes)

I learned to make this a long time ago from a friend's mother. It is even better with blueberries stirred into the batter. You can reduce the sugar by quite a bit as well.

Thin Mint Crackers

Though one of my pet peeves is reviewers who change a recipe completely then post about it, I had to tell what I did with this recipe idea. I tried it using the chocolate "Famous Wafers" to dip because I had a box in the cupboard I needed to get rid of. They were awesome and exactly like the GS cookies. I'll be interested to try it with crackers to see the difference. I've made a delicious candy using two Wheat Thin crackers with peanut butter in the middle dipped in chocolate, so I KNOW crackers work well for these kind of treats.

Caramel Pie

Rich, rich, rich! To make the English "Banoffee Pie", add 1 1/2 pounds of sliced bananas on top of the caramel and top with fresh whipped cream with a small amount of instant coffee dissolved in it before beating. *CAUTION It is extremely important to add more boiling water frequently during the cooking of the sweetened condensed milk. 4 hours is a long time and if it is allowed to boil dry the can will explode causing a mess and possibly injury.

Open-Faced Broiled Roast Beef Sandwich

Delicious! Even better with home-cooked rare roast beef instead of deli, but I never seem to have enough of that left over for sandwiches! I don't like to toast the rolls because then it seems dry, I just put them under the broiler alone briefly before adding the sandwich ingredients.

Slow-Cooker Chicken Tortilla Soup

I've made this recipe twice now. The second time, I simmered it on the stove instead of in a slow cooker. The flavor was much better cooked on the stove in my opinion. The tomato cooks down and gets less acidic and the spices blend and mellow more with stovetop cooking I think. I used the ingredients as directed except I added a can of black beans and extra chicken broth. My husband didn't like the slow cooker version, but did like it cooked on the stove. The tortilla stips really make the dish, their flavor is awesome, don't skip them!

You could use chicken broth or vegetable broth to substitute for wine, and in this recipe milk or even water would probably work too.

Brownie Cups

I love these. Absolutely delicious. I was concerned about texture with so many eggs just dumped in with the other ingredients, so I beat them with the sugar first until light colored (not too much or they'll collapse when they come out of the oven) then added the flour and folded the chocolate mixture. Maybe uneccesary, and this way probably created more of a cake-like cupcake than brownie-like. They were chocolatey, soft, sweet and needed no icing.

Bean Burrito Casserole

Instead of a can of condensed soup I like to use one or two cans of "chili beans" (the seasoned kind) and a cup of sour cream as what holds the casserole together. You can add any kind of extras that sound good, I like the sliced black olives. It also works to cut the burritos into thirds and just stir together insead of layering. Great for potlucks, which it is best for me to make it for because otherwise I can't stop at one helping of this comforting dish!

Chocolate Caramel Cookies

Sort of a crazy measurement "17 tablespoons sugar"! That's 1 cup plus 1 tablespoon. A bit fussy to make, but worth it. We have a nut allergy in the family, so I had to leave out the pecans.

OK for a snack, though I don't think I'd serve it as a dessert to guests. The recipe calculates out to 3 WW points per cupcake. Next time I will try substituting some oat bran for some of the white flour to increase the fiber.

Old-Fashioned Potato Pancakes

These are good, fairly quick to make and use simple ingredients so it is a great weeknight side dish. Squeeze the shredded potatoes in a tea towel to extract as much water out of them as you can so they hold together better and splatter less when cooking.

Dietetic Banana Nut Muffins

When I run this recipe through the WW website's recipe-builder program it comes out 2 points per muffin. I tried calculating it for egg whites and Egg Beaters with added bran or no bran it always came up 2 points. And that's with no nuts. Far better than a sugar/butter/egg recipe but I don't know how others came out with 1 point per muffin.

Outrageous Ranch Tacos

Unseasoned cooked ground beef is kind of gross, even when topped with lettuce coated with ranch. The beef needs taco seasoning or something. Not exactly "outrageous", but an easy weeknight recipe once you make that improvement.

Confetti Coleslaw

I was surprised this didn't taste super sweet because of the amount of honey in it. But that's ok, I didn't really want a sweet dressing. I've been trying to duplicate a slaw they serve at our favorite Mexican restaurant, this isn't it but it's not bad.

Banana Crumb Muffins

What can you say about a recipe that's got over a thousand reviews? I wonder if "banana" is the most frequent ingredient search on Allrecipes? I needed to use up some overripe bananas and these are a nice and banana-y use of them. I really like the sweet crunchy topping though sadly it turns soft and soaks into the muffins after storage overnight. They are so delicious warm! I got 12 muffins rather than the 10 the recipe states.

Spoon Rolls

I hate to be the first reviewer of a recipe and say negative things about it, but we did not like these at all. I was really looking forward to them. After the time it took for them to be ready it was a severe disappointment not to like them in any way. The texture is not at all like a yeast bread, it is very soft like a muffin or cake (but unfortunately without the flavor). Add to the texture issue the upleasantly strong taste of baking powder and it is an all around loss. Mine looked just like the photo, so I don't think I did anything wrong. That's just how they are and I didn't like it. I tossed the baked rolls along with the remaining batter in the trash.

Roasted Red Pepper and Tomato Soup

I was worried while this was cooking because the tomato seemed very dominant and harsh and it smelled like pizza, but after simmering the pepper flavor came out nicely. It did seem like a lot of work for a simple supper though. My husband though it would be a good base for the addition of a lot of other vegetables.
