Lemon Icebox Pie III

This was excellent! I made my own graham cracker crust, with real butter, and baked for a few minutes, then cooled. My lemons were on the small size, so I used 5 lemons and a couple teaspoons of zest. It's not overly sweet, so I topped with sweetened strawberries in syrup, and it was a hit! I love the texture, and don't think it needs to be lightened like some have suggested. Thanks, I'll make again.

Blueberry Lemon Bread

I would give it a 5, but I had the same problem as others. I tried the hint of layering some of the batter, then adding the blueberry/batter, and even flouring the berries did not keep it all from sinking to the bottom. The taste however is very good. I added a light glaze of lemon juice and confectioner's sugar for a little extra sweet. My loaf was also a little short, but my loaf pan is large, so that could account for that. Can't wait to try some in the morning with coffee. Tastes good, just wish the blueberries hadn't sunk.

Peanut Butter Pie I

This recipe ROCKS!! If you like peanut butter, this is the recipe for you! I made it exactly by the recipe, and topped with chopped peanut butter cups, a drizzle of homemade hot fudge sauce, and whipped cream. YUM! Thanks for an excellent recipe. It is rich and over the top, but what the heck!

Strawberry Cheesecake

I made this for Mother's Day and it's excellent! I had to cook about 10 or 15 minutes longer, and the texture was perfect. Next time I make it, I will double the strawberry sauce, and use more than the 1/3 cup reserved used in the cheesecake, mine was a little pale. The strawberry sauce really adds punch to the cake, so don't skip it. I also topped with whipped cream, and everyone loved it!

Empanadas

These are excellent! Next time I'll double the dough mixture. I got (6) 4" empanadas, using a dough press set, worked great! I used peach preserves and raspberry, then rolled in cinnamon sugar, and they are TDF! I also rolled the dough out on parchment with plenty of flour, placed on parchment lined baking sheet, then set back in the fridge for about 20 minutes, then baked. So good, I can't wait to try other combinations.

Too Much Chocolate Cake

I'm changing my original posting of 2* to 4****. I made this 2 days ago, and I think it has improved. Also, heating in the microwave for about 30 seconds makes it even better. I followed the recipe exactly, and used the Satin glaze posted here. It is very decadent, and very chocolatey.

Good Old Fashioned Pancakes

Wow! This recipe is awesome!! The only thing I did different, was as other's suggested, added just a little vanilla extract. The batter is very thick, which you think is not going to get done, ending up with a gooey center, but do not fret!! They puff up and are so fluffy, and as someone else stated, they smell like a big sugar cookie! The taste is excellent! Thanks to Grandma and Dakota for a winner!!

Satiny Chocolate Glaze

I needed a simple glaze for mini brownies that I baked for Valentine's goodies. This worked wonderfully! I prepared in the microwave, and dipped the brownies, then covered some with sprinkles, sliced almonds, toffee chips, and swirled chocolate chips. Excellent recipe, and tastes great! Thanks!
