Toasted Garlic Bread

Reviewed: Jan. 8, 2012
Was very good! The only thing I did differently is that instead of adding mozzarella at the end, I added some parmesan into the butter mixture.

Italian Style Meatloaf I

Reviewed: Jan. 8, 2012
We loved this! The only thing I did differently was use saltine crackers instead of bread crumbs. Mine wasn't mushy at all...maybe because I drained the juice out of the tomatoes? Plus, I baked on top of a couple of slices of white bread so it wasn't wallowing in beef fat. Will definitely have this again! We ate it with a salad and the 'toasted garlic bread from this site.

Rempel Family Meatloaf

Reviewed: Oct. 20, 2011
Not great. This is the second ground meat recipe I've made with onion soup mix and I think we just don't like that flavor. It dominates the whole thing, I couldn't taste the steak sauce or cheese at all. I did give it 3 stars because the texture was good and it stayed moist.

Red Garlic Mashed Potatoes

Reviewed: Oct. 9, 2011
These were really good! I was out of garlic powder, so I just crushed a large clove with the flat of a knife and boiled it with the potatoes, then whipped it all together. My BF and I wondered about adding the sugar, but were both very pleasantly surprised! I will definitely make this again.

Chicken and Black Bean Casserole

Reviewed: Sep. 12, 2011
I liked this! My bf didn't, but I think that's because it had colors in it! :-) My rice was already cooked, therefore I didn't need all of the liquid from a big can of diced tomatoes. I used rotel and then added some green and red peppers for a little added flavor, but I think this would've been fine exactly the way it's written.

Peanut Butter Bars I

Reviewed: Aug. 22, 2011
Was very good! I made it as written and think I agree that it may have a bit too much butter and powdered sugar originally. Will cut back on them slightly, but overall very rich and tasty!

Cheesy Ham and Hash Brown Casserole

Reviewed: Jul. 7, 2011
This was AMAZING! It was easy to make and very rich and creamy! I had to adjust the ingrediant amounts and cooking time due to the fact that we have no oven, so I bake things in a toaster oven. I did not add any ham and I mixed the parmesan in with everything else instead of sprinkling it on top. It didn't get soupy, or 'curdle'. I noticed in the reviews that a lot of people didn't care for the sour cream taste but I didn't find it overwhelming, perhaps because I really like sour cream. To get a nice cheesy crust on top I just broiled it for a few minutes after it had cooked through. We had the leftovers the next day and, as is usually the case, they were even better!

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Jun. 26, 2011
My BF didn't like this recipe at all. I did. The only things I did differently were these: I didn't char the tortillas because of the time factor, the texture wasn't perfect, but it still tasted good; I had some left over diced tomatoes that I added into the sour cream/chicken mix; I used Mexican 4 cheese blend instead of Monterey Jack because it's what I had; I used regular sour cream because I use real everything; I cut the recipe in half since it's just the two of us, worked fine. The leftover's the next day were still good! I was very pleased! Especially now that I know when I make it next time I'll have a tasty lunch every day for a week since BF won't eat it! Yay!

We thought this recipe was very tasty, but seemed more along the lines of a dip then a meal. Was very rich and delicious!

Spinach Cheese Tortellini

Reviewed: May 30, 2011
I thought this was great! And, as usual with pasta, the leftovers were even better! The changes I made were the following: I used fresh spinach instead of frozen; real garlic instead of garlic salt; I followed the advice of another reviewer partially and added half cream cheese and half pepperjack instead of all cream cheese; I didn't add tomato only because I didn't have one, but will be sure to have one next time. I'm sure this would be great made as the original recipe, but I had to work with what I had and it was a definite keeper, not to mention a repeater!

Monterey Ranch Bread

I will give the rating my boyfriend gave because he is so finicky that when he really likes something it's almost a surprise! He loved the taste, I loved how easy it was. I thought it tasted pretty good, but was very rich. What I didn't like was the fact that he had all the leftovers gone by the time I got home from work the next day!

Jucy Lucy Burgers

Reviewed: Apr. 19, 2011
I didn't want to give it a low score because I've had the original at Matt's and it was AMAZING, but it's that usual not-as-good-as-the-original thing. Plus, I think the meat has to be a lot less lean than what I was using! Where was all the greasy goodness?

Seasoned Turkey Burgers

Did not work for us. If we hadn't done it on the grill I think it would have been worse. I agree with one reviewer that it tasted like onion soup burgers. It wasn't terrible, but wasn't one we would do again.

Mama's Asian Chicken and Rice

Reviewed: Mar. 28, 2011
We thought this was great! I hadn't paid attention to the reviews saying to double the sauce, and the lack of sauce was the only thing that wasn't ideal. I thought it odd that there wasn't any need for the corn starch mixture because the sauce all evaporated into the chicken, but, even so, the flavor was phenomenal! I was making amuch more complicated orange chicken recipe but I think I like this one better! Thanks Scarlett!

Simple Hamburger Stroganoff

Reviewed: Mar. 19, 2011
We thought this was great! My boyfriend thought that it might taste like hamburger helper, but not even close! The only thing I would change in the future is to use a few less noodles. We loved the rich flavor and will definitely make this again!

Chicken Breasts Supreme

We really enjoyed this! It's simple and uses things I usually have available. I made it exactly as written except I didn't add the sour cream until it was already dished up because I forgot about it! Still delicious, and even better, of course, as leftovers!

Chicken Enchiladas II

Reviewed: Jan. 13, 2011
Even though I agree that it didn't quite strike me as being like any enchilada I've ever had, I really liked the flavor. It was a bit too creamy but that is probably my fault since I just cooked a pound of chicken instead of measuring 1 1/2 cups. we'll make this again!

Baked Ziti I

Reviewed: Nov. 18, 2010
Pretty good! I halved everything accept for the hamburger and parmesan due to a limited cooking area. A 9x9 was close to overflowing! I did use ricotta instead of sour cream because it's what I had; I added italian seasoning, parmesan and basil because I always do when I'm using store-bought sauce; I layered it putting the sauce down first. This is hearty, filling and makes great left-overs! We will have this again!

Meat Loaf Pie

Reviewed: Mar. 8, 2010
This was pretty tasty. I did double the amount fo worcestershire sauce and quadruple the amount of catsup. I think it would have been too bland without it. I mixed the egg, onion and beef before I browned the meat, then the catsup and w sauce with just a few minutes to go. I didn't use a crust and i think it was just fine that way. I didn't care for the mashed potatoes I used, but that didn't have an effect on my rating. Real are always better!
