About this Cook
I live in Costa Rica with my fiance. We love cooking together after a long day of surfing. Because we are in a small town, there aren't a lot of products available so most of the recipies we cook are pretty basic. We have barbeques a few times a week with friends so we are always looking for new recipies that are easy and delicious.
My favorite things to cook
My fiance loves to barbeque and grill. I love to bake, and also like Italian dishes but will cook almost anything that sounds yummy. I generally try the recipes that have reviews. I love sweets so I enjoy finding dessert recipes. The church that I attend has a potluck every month, so I am always trying to find something that everyone will love.
My favorite family cooking traditions
My fiance and I make crab stuffed mushrooms every year at Christmas. They are so delicious. My fiance grills alaskan king crab legs on the bbq grill and then we mix the meat with stove top, garlic, mayo and spinache, stuff the mushrooms and smother them in mozerrella cheese and cook them in the oven in butter. They are soooo good and my favorite at the holidays. Obviously you can't eat them every day because they are so fattening.
My cooking triumphs
I made enyucados that turned out delicious. It's a Costa Rican dish that is basically mashed yuca (similar to a starchy potato) filled with meat and cheese and then fried til golden in a very thin layer of oil. Everyone loves them and the Costa Ricans are amazed that I can cook enyucados.
My cooking tragedies
I tried to cook chicken fried steak once, and was working with a gas stove. Some of the oil must have gotten on the bottom of the pan because the whole pan ignited in flames and I started screaming and freaking out. Ahhh...good times!

Mexican-Style Goulash
Really easy and really good. I was looking for a recipe similar to this because my dad used to make this for me when I was a kid. This recipe seemed to be the closest I could find and it turned out exactly the way I remember he used to make it. One of my friends dropped by and he ate two plates of it. Very yummy, easy and filling.

MMMMM... Brownies
These were so fun to make-and really really good. My fiance is going to love me forever because of these brownies. He loves rich sweets that you need a glass of milk with-and I had to hide these from him. I will never ever use a box mix for brownies-these were easy and so good.

Chinese Chews II
Yummy-I made these for a church potluck and everyone loved them. At least four people asked me for the recipe. They were so easy too! And they look pretty! I had several friends call me up and say, "Can you bring me one of those thingys that you had the other day? They were so delicious!" Come on now, every cook wants to hear that!
