Pumpkin Crumb Cake

Thank you for such a yum recipe! The only changes I made were to add cinnamon, nutmeg & allspice (just a pinch) & a teaspoon of vanilla to the pumpkin mixture and reduce the sugar since the cake mix is always already super sweet. Hubby pronounced this as one of the best pumpkin desserts i've prepared so far.

Cream of Tomato Gorgonzola Soup

Delicious! I did doctor it up a bit though by combining several recipes from this site. I used fresh basil, used fresh tomatoes (boiled with onion, garlic, oregano) and used cream cheese instead of milk to make the soup creamier. The gorgonzola complimented the flavors wonderfully and my hubby who normally does not like gorgonzola loved this soup!

Sausage Jalapeno Poppers

The only change I made to this was to use mexican "queso fresco" so that it wouldn't ooze out when cooking. The results were phenomenal. My family could not stop raving about them, including those that don't particularly like jalapenos. Some of them did turn out a bit spicy, but nothing that couldn't be handled.

Award Winning Peaches and Cream Pie

I tried this out on our monthly Family Night and everyone loved it! I took the suggestions of others and baked the "crust" for 10 minutes or more, and once it had firmed up a bit, took it out of the oven and after it had cooled off (about 5 minutes) I brushed egg on top to create a barrier between the crust and the peaches. I put it back in the oven for another five minutes and took it out again and followed the rest of the recipe as indicated. Once it was done, I let it cool off and refrigerated it overnight with awesome results. The crust was tasty, not too sweet, and the combination of peaches with the cream cheese was a big hit. A bit time consuming but the results are worth it.

Gooey Butter Cookies

Great cookie! My only change was to not add the powdered sugar..they're already sweet as it is. Other reviewers mentioned that the cookie is more like a cake texture and they're right. The only time it's gooey is straight out of the oven. Letting the cookie cool for five minutes after taking it out of the oven really enhances the flavors. The baking time is just perfect.

Banana Oat Muffins

These muffins are quite tasty. I reduced the sugar to 1/3 cup because the bananas I had were quite ripe and I didn't want it to be too sweet. Right before popping these into the oven, I added a crumb topping consisiting of oats, brown sugar, cinnamon and butter. This made the presentation and the taste of the muffin great! My only concern was that it tasted too much like the baking soda, but I probably just overdid it with that. Overall, great recipe to keep when you want to make banana muffins from scratch.

Garden Cheese Soup

Great base recipe! I used what veggies I had in the fridge and it turned out tasty. Even my husband who doesn't like vegetables at all approved of this soup. My only change was to sautee three cloves of garlic along with the onions and celery. Other than that....yummy!

Zucchini Cornbread Casserole

Great recipe. I followed some of the suggestions of other users such as browning the onions/garlic to soften them up, and added a bit more cheese and added one shredded carrot for color. The casserole was initially runny when I took it out of the oven after 60 minutes, however, once it cooled off it firmed up very nicely and turned out delicious!

Tequila Lime Shrimp

I think the measurements are off - 1/4 cup of salt is way too much. This already has lime & vinegar so I reduced the salt to 1 teaspoon and reduced the oil to just 2 tablespoons. With those modifications, I was still left with lots of marinade left over, which I simply cooked and poured over some white rice. Very tasty!!

Grilled Apple and Swiss Cheese Sandwich

Great combination of flavors. The tanginess of the Granny Smith apple magically disappears and becomes "one" with the other flavors. Can't describe it really, but it really is delicious and I agree with the contributer of the recipe, you have to do this on wheat bread. Tastes so much better!

Slow Cooker Honey Garlic Chicken

The chicken was way too sweet, I couldn't taste the garlic at all and chicken was dark, almost black, and rubbery. The only things that I did different were to reduce the honey to 1/4 cup and increase the garlic to 6 cloves and still it was too sweet and overall disappointing. I don't think i'll be trying this again anytime soon.

Crumb-Coated Chicken Thighs

Great recipe to use with the ingredients you have on hand. In my case, I didn't have prepared bread crumbs, so I made my own by toasting four slices of wheat toast then crumbling them once they'd cooled off. The recipe has a lot of room to experiment. I added some curry, a dash of garlic salt and some thyme..yum! The cooking time was a bit longer than stated, it took at least 60 minutes of baking time for the thighs to be ready. Chicken came out perfect, juicy, tender and full of flavor. I highly, highly recommend this.
