I could not find a chicken smaller than 5 lbs at my market. the night before i seasoned my chicken both inside and out with olive oil-on top only, salt,pepper,garlic powder, onion powder,oregano and peprika inside and out. in the morning i stuffed the bird with a med onion cut into chunks, and 1/2 an orange,and a clove of garlic, the other 1/2 of orange i squeezed on top the chicken.Under the skin i put 2 garlic cloves and butter. i did not put any water or broth in the crck pot because i did not want a boiled chicken. the chicken created its own broth i used for hommade stuffing and gravy on the side. the chicken had great flavor from the orange. this chicken was so moist and fell off the bones. did not need a knife to carve this bird. great flavor and so tender
