Meatball Sandwich

These were good, though next time I may add a touch of salt to the meatballs. I baked them on a rack in my baking pan so all the grease could drip away -- I wish I had sprayed it with nonstick spray.

Pizza Bake with Sausage and Pepperoni

This was good and easy. I didn't have four-cheese blend, so I used mozzarella, torn up provolone slices and a bit of Romano. Did about 10 ounces of noodles, and accidentally added the whole 24 ounce jar of marinara sauce, but it wasn't too saucy. Baked in a 13x9 and put the pepperoni on top of the cheese.

Butter Soup

This was fun to make since making my own noodles was a first. Instead of the 8 cups of water I used 6 cups chicken broth and 2 cups of water. Added some rosemary and pepper to the noodle dough and a few splashes of milk in addition to the water. Per the advice of others, I doubled the noodles. Next time I will 1.5x the noodles.

Slow-Cooker Tex-Mex Chicken

OMG! This was such a hit with all the kids... rarely do they all rave! I used boneless chicken thighs straight from the freezer which I shredded at the very end. Also used a whole pack of taco seasoning mix (stirred in) and diced the green peppers to make them less noticeable to the kids. Skipped the red pepper and the flour. Served on top of rice and topped with the cheese and sour cream.

Vegetarian Burrito Casserole

This was very good. Though, we are not vegetarian, so it was just easier for me to use ground turkey instead (1 pound). One reviewer wrote that canned tomatoes, plus salsa was overkill, so in place of the huge can of whole tomatoes, I used a 15 ounce can of diced tomatoes which I just dumped in, not bothering to save the 1/4 cup for later. This worked out to be the perfect amount of liquid for my 1 lb. of meat. Also used a larger casserole, which it filled, so do not even attempt the 8x8. Mixed diced jalapeños right in with meat instead of layering. I think sliced black olives on the top layer would have been a nice addition.

Apple Dumplings I

This was an awesome recipe. I thought it was more of a breakfast recipe, but on some of the reviews it said that it was really a dessert item. I think this had a really good sauce!!! When you're trying to figure out when biscuits are golden you can't really see in the oven because of the light so you will have to take it out of the oven to see it. If you take the dumplings out at the right time it will be crunchy on the outside and soft on the inside. I think the cinnamon on top tasted great, but I don't think you need to measure it. I think it was one of my favorite sauces ever. This recipe is perfect for breakfast because it just the right amount of sweetness (I only put in 2/3 of a cup of sugar). Also, my biscuit container was smaller than you're suppose to put it in. In which case just cook it for about 20-30 min. This a great recipe. I will probably make this recipe again. (As written by my 10 yr old 'chef.')

Rotini Pasta Bake

This was a great family meal... easy and good! I adjusted the measurements slightly to 1 pound of beef and 1/4 chopped onion. Also seasoned with garlic powder and a few dashes of tabasco before sending to the oven as it seemed slightly bland. I layered half of the cheese in the middle and sprinkled Italian seasoning on the very top.

Italian Sausage Soup

Very good. I didn't have Italian tomatoes, so I used regular stewed and added about a teaspoon of Italian seasoning. I diced the zucchini very small to make them less distinguishable to the kids... it worked! The kids liked it.

Easy Company Chicken

This is pretty good, but not fabulous. I would have rated only 3 stars, but my 8 year old daughter gobbled it up, which is rare, so that has some merit. I halved the sauce ingredients and still had plenty to cover the chicken.

Orange Banana Smoothie

This was an OK recipe. The orange was stringy so I had to chew that part and I hate chewing smoothies. If I make this recipe again I will use orange juice instead of of oranges.

Loved the flavors of this. I added a can of black beans (rinsed and drained) per others' recommendations. Served over rice with a dollop of sour cream and cheddar cheese on top. Yum.
