Broiled Tilapia Parmesan

We loved this recipe. It was so tasty and easy to make and came out perfectly done. I didn't have celery salt, so I crushed a small amount of celery seed and added salt.

Southwestern Turkey Soup

This was good, but I didn't give it 4 stars because without modifications it wouldn't have been as good. At the halfway point I thought it needed more since it was very tomatoey and brothy and the was about it. I added some corn (maybe a 1/3 cup) and a can of rinsed black beans. I also added extra cilantro and cumin. I was worried about it being too spicy for the kids, so I reduced the cayenne to 1/4 teaspoon which was plenty. Topped with cheddar, sour cream, and crushed tortilla chips.

Slow Cooker Chicken with Mushroom Wine Sauce

Pretty good for how easy the recipe is. I used sauted fresh mushrooms, onion, and garlic. At the very end I took the chicken out and stirred in about 1/4 cup of sour cream to thicken it up. I then turned to high for a few minutes and cooked with the lid off. It seemed to work to thicken and gave a good flavor. I put the chicken breasts in frozen and it was perfectly done in about 6 hours.

Pumpkin Turkey Chili

This was suprisingly delicious. I wasn't sure about the pumpkin, but I was curious, so I had to try it. I added a small can of tomato sauce, a can of kidney beans, about 1 t cumin, a little allspice, and a dash of cinnamon. All my kids loved it.

Chicken Pot Pie IX

This was the first time I ever made a pot pie and it was delicious. All the kids liked it too. I added more salt and pepper per others' suggestions. Next time I will try 3/4 cup of peas since it seemed heavy on the peas.

Cumin Turkey Burgers

My husband and I didn't care for these very much. The spices weren't a bad flavor, but too overpowering and a little out of place for a burger. I also didn't care for the consitency. The kids, however, liked them. I omitted the jalepenos.

Zucchini-Chocolate Chip Muffins

Fantasic recipe! I took cue from another person who said her kids devoured them right out of the oven, and doubled the recipe. I am glad I did. I substituted a little of the flour for whole wheat flour and since I only had regular size chocolate chips I threw in extra to ensure each muffin had plenty.

Spanish Rice II

Very good. My 7 year old son has been my advisor on the ratings. It was almost too spicy for him, but he decided it still deserves all 5 stars. I agree. I omitted the green pepper and substituted broth for the water, but measured slightly under the 2 cups to adjust for the liquid in the tomatoes. However, my 6 year old did not prefer it at all.

Slow Cooker Buffalo Chicken Sandwiches

This recipe is a keeper. It was very easy and good. My batch was a little salty as others commented, but I didn't notice that until after I added the butter. Maybe try unsalted butter if you have it. I wouldn't skip the butter because, despite the saltiness, it did improve the flavor and made it seem more like wings.

Basil Burgers

Great, easy recipe. The kids gobbled it up. I used about 1/4 cup fresh, chopped basil and topped with shredded mozzarella at the grill. I also mixed up some pesto mayo per someone's suggestion which I made with approximately 5 parts mayo to 1-2 parts pesto (from a jar) and a smidge of dijon. Delish.

Pasta e Fagioli III

I doubled the recipe because I had such a meaty ham bone and used dried canellini beans. I thought the broth was weak, so I added some ham buillion. It was pretty good, but it seems like it could have been better. Maybe it could use some Italian Seasoning. We added parmesan cheese at the table.

Pineapple Chicken

Not bad, but not really the flavors I like together. I only sought out this recipe to use up some fresh pineapple I had in the refrigerator. The kids didn't like it very much. I added a bit of cornstarch at the end to thicken up the sauce.
