Spanish Rice II

This is a good recipe for some easy comfort food. I made the mistake of using cooked rice (whoops!), but, it still turned out well. Haven't had Spanish rice in years because I didn't really quite understand how it was made. I'll be making this often now.

Slow Cooker Pozole

This is one of the most satisfying soups I've ever made. I asked a couple of dear hispanic ladies I know at our local farmer's market how they made it, and got a couple of different versions. The result was that I added a some chopped cabbage, corn, and some processed tomatillos. Also took another reader's suggestion and ran the ancho chile with some broth through a food processer & strained it. A little labor intensive, but, well worth the effort. Thanks for a really good recipe.

Easy Pasta Fagioli

Good recipe. I used rather more chicken broth than tomato sauce & added some oregano as well. Also ran some tomatoes from our local farmer's market through a food processor for the tomato bit. It's one of those dishes that tastes even better after brewing a day or two. A really satisfying soup. Thanks!

Classic Macaroni Salad

This is a good, easy recipe. I've made it several times over the summer, tweaking it a little differently each time. I've cut the sugar down to 1/4 C., and find that rice wine vinegar gives it an interesting tang - not overpowering, just enough to let you know it's there. Our local Trader Joe's sells canned roasted red peppers & they really give the dish some color and flavor as well.

Tender 'n' Tangy Ribs

I made these yesterday in a Dutch Oven - don't have a crock pot. They were really tasty. Added a little liquid smoke to them. I would wish for a little thicker sauce, perhaps adding some cornstarch in the liquid ingredients might help, or cooking in an oven uncovered - or both. Perhaps someone else has an idea on how achieve a thicker sauce that clings to the meat. In any case, it's a good, easy recipe.
