Spinach and Potato Frittata
i read the reviews (as i always do, for an inspired changes) and they are dead on. definitely season the potatoes in a bowl before adding to the pan. i opted for garlic powder, sea salt and a peppercorn medley. i didn't use nearly as many potatoes, you honestly don't need too. i used more green onions and spinach. i added garlic salt to the vegetable mix while cooking. i made it for easter brunch and my family raved all day about it. will most assuredly make again... with my tweaks of course.

Chicken Enchiladas I
absolutely delicious. came out perfect. i made it for my brother and boyfriend, they couldn't stop talking about it all week. next time i'm going to use less water and less sour cream, and add corn to the mix. i'd use a whole bell pepper...1/3 cup just isn't enough in the ratio. overall, i'm adding this one to my personal collection.

Best Spanish Rice
be sure the brown the rice completely. otherwise, i wasn't impressed overall. despite the seasoning it was almost bland... i wouldn't make this specific recipe again.
