Best meatloaf I ever had. I did not use the ground ginger because I didn't have any and substituted dry onion soup mix for the chopped onion. There wasn't any leftovers, but my husband asked if there was. I liked the sauce on the bottom because it mixed with the meat juices and made an excellent sauce to add over top of the meatloaf.

Yum. I broiled it in the oven at 500 for about 15 minutes and turned it half way through. I wrapped the bacon around more than one piece though. It seemed like to much bacon for one piece. I already made this again and plan to continue making it.

Yum. Easy and tasty. I used two boxes of Jiffy mix because I couldn't cover the whole thing with one. I should of only cooked mine for 25-30 mins. The corn bread was a little dry.
