About this Cook
I'm a SAHM with two children, a toddler boy and baby girl. I'm not a great cook, but I'm learning and, more importantly, really want to become better. I'm trying to learn and improve now, so my children will enjoy my cooking and eating healthy as they grow up.
My favorite things to cook
As far as main dishes are concerned, recipes I'm familiar with, because it takes less time and creates less mess/catastrophes or confusion. Desserts are another story. I enjoy getting creative and learning new things, when I can find the time/energy. See below for some of my favorites. I DO love to sneak healthy things into any recipe. The more nutrition I can get out of any meal the better, but only if it doesn't compromise the taste.
My favorite family cooking traditions
soups (minestrone, veggie cheese, etc), oatmeal choc. chip cookies, funeral potatoes and ham, lasagna, sheperd's pie, chicken enchiladas, smoothies...
My cooking triumphs
I made my first real homemade bread last week. It turned out better than I hoped, which I made one loaf and several small bread bowls out of. Delicious! I also made lasagna the other day for my 2nd time ever, and it was quite delicious, if I do say so myself...and with only a brief phone conversation with my mom, no official recipe. I make a few good desserts, such as peach cobbler, oatmeal cookies, better-than-anything cakes, brownies (many kinds) and banana/zucchini breads.
My cooking tragedies
too many to think of one right now. I make silly mistakes all the time - too much pepper, not enough spice, too bland, burnt, doughy, you name it!

Molasses Cookies II
Molasses cookies aren't my favorite, but this is a very tasty one. Spicy and Soft (I'm sure could be cooked longer to be wonderfully crispy).

Brown Sugar Meatloaf
My family and I all loved this. I actually used ground turkey, since I didn't have ground beef on hand, and it turned out better than I expected. I also used a bit of (couple Tbsp maybe) Italian Seasoned bread crumbs. I served the meatloaf with fresh green beans and a baked potato. Delicious!

Jean's Homemade Chicken Noodle Soup
I didn't follow the recipe exactly, but this was the base for the soup I tried tonight, which turned out delicious! Both of my typically picky eaters loved the flavor, as well as my husband and me. I sauteed 1/2 an onion in oil, added quartered carrots, spices (basil, oregano, thyme, rosemary, parsley, black pepper), and celery. Then I added the chicken stock from chicken I had freshly boiled (in water with the sliced ginger and pepper). I still sauteed the diced chicken with (now chopped) ginger root and added that to the main pot. I threw in some chicken bullion and broccoli at the last minute (didn't have enough celery/greens) before I added some homemade egg noodles (recipe I found on here...great!). Cooked til noodles were al dente. I personally enjoyed the touch of ginger immensely. Very flavorful and savory, a perfect soup for the soul!
