The Best Vegetarian Chili in the World
I have to agree with the name of this recipe - it is the BEST. I used a pre-cut, chili ready mix of red/yellow peppers, onions & jalapeno and just sauteed everything together. I did not use garbonzo beans but used 2 cans of kidney beans. I put it all in the crock pot, added 1 zucchini about 2 hours before dinner and a 15 oz bag of frozen corn 1 hour before. Not everyone in the group was vegitarian so I browned a pound of hamburger and mixed it with a can of chili beans for those who wanted meat. I WILL make this again since winter in Minnesota is just starting :-).
