About this Cook
I am a stay-at-home mom of two. Now that my kids are getting older, I can experiment more and spice meals up a bit. I'm always looking for new recipes to try out, but like to keep things healthy.
My favorite things to cook
I like to bake, but am still searching for the ultimate soft,chewy chocolate chip cookie recipe-like the ones they make in our local supermarket, except minus the trans fat! My family loves pasta and casseroles.
My cooking triumphs
I make yummy Chicken Enchiladas and a tasty Italian Bread in the bread maker.
My cooking tragedies
Pork. Especially pork chops. It turns out chewy, all the time, no matter what.

Chicken Breasts Pierre
This was really good! I made this with beef broth, instead of water, because I had a carton already open in the fridge. I also used a bit of cayenne, instead of the hot sauce, and added sliced onion and chopped red pepper. I cut the chicken breasts into small cubes, before cooking, and served it over basmati rice. Next time I would like to try skipping the flour part, and just cook the cut up chicken, and then add to the sauce. Thanks for sharing!

Banana Muffins I
I am surprised by the number of people who loved this recipe, and have to agree with those who said they found it to have too much baking powder. I did not like the 'spongy' texture. It only made 9 muffins, and they did not have the high rounded tops that my usual muffins have. Sorry, but I will not be making this one again.

Health Nut Blueberry Muffins
This is a very good recipe, and the muffins came out with a great texture. I used half a cup of brown sugar (unpacked), for the white sugar, and 1% milk with lime juice for the buttermilk. Next time, I will follow other reviewers suggestions and add some spice, and also cut down or omit the baking soda. I only got 10 muffins out of this, instead of 12, and they took more than 15 mins. to be fully cooked inside. I had no problem using frozen berries, when mixed in with the dry ingredients. Thanks for a tasty, healthy recipe, will definitely make again and again.
