Buttermilk Oatmeal Muffins

A great HEARTY muffin! Not like a sweet cakey muffin, but wholesome tasting. I always add some vanilla & cinnamon to mine. Usually some chopped nuts and sometimes frozen blueberries or chopped apples, even bananas. It's a very forgiving, versatile base recipe to start with: then add in what flavors you like. Just remember to SPRAY the liners inside w/ cooking spray before adding in your batter, or they will stick! My 4 yr. old loves eating them, and I feel good serving them :-)

Pineapple Upside-Down Cake V

Sensational Cake!! I used twice as much coconut as called for *awesome* I put the whole cake in one 9 x 13" pan. I also used Pilsbury yellow cake mix, definitely the best! I used one large can of pineapple chunks for the cake. I added 1/2 cup of pecans to the coconut, brown sugar, butter mixture in the bottom of the pan. Everyone thought this was the best cake ever! So moist and so flavorful, the coconut is a delight in this cake, it adds a crunchy sweet surprise when cooked w/ that brown sugar & butter! When it was done I flipped the whole cake over on a cookie sheet lined w/ parchment. *add the melted butter, brown sugar, coconut, pecans, then the pineapple, then the mixed cake batter.* It took about an hr. to bake at 350 for the 9 x 13" pan. It's delicious :-)

Waffles I

Super Delicious recipe! I used SELF rising flour and omitted the salt & baking powder, and it worked perfectly! I also beat my egg whites seperately and folded them in last. Based on other reviews I used 1 tsp. vanilla and 2 Tbls. sugar. I folded in 1 cup of frozen blueberries at the very end and cooked in my waffle maker for 5 minutes. AWESOME! My waffle maker made 8 waffles using this recipe. This one is a keeper and will be my regular waffle recipe. Super easy and superb! If you add in blueberries-leave them frozen. They make for a really great Blueberry waffle!

Tacos De Matamoros

Fantastic meat for Tacos! WOW, no more taco seasoning packets for us! I put this in the crock pot, and cooked for 2 1/2 hrs. I wanted more heat, so I added 1 1/2 tsp. crushed red pepper. This recipe is better than any I've ever had in a Mexican restaurant! You control the heat and the salt in this recipe! I love it!!

Swiss Chicken Casserole II

Really good!! I put mine in the crock pot and use frozen chicken breasts. Cook for 5 hrs. on LOW. Turns out perfect! (I use the reduced sodium cream of chicken soup) Otherwise it tends to be too salty for our taste. Cream of mushroom works great too in this recipe :-) Super easy, and one of those super comfort foods!

Popovers

Very delicious! I followed other user suggestions: Added 1/2 tsp. vanilla, 1 tsp. sugar to the batter. I mixed it all in my blender, super easy. I used my regular muffin pan, sprayed with Pam. It made 8 popovers. I baked at 450 for only 12 min. then turned heat down to 350 for 12 minutes. Perfect sprinkled on the inside w/ sugar and cinnamon once baked.

No Bake Peanut Butter Cookies II

WOW, these were a great fit for my peanut butter craving! I brought the sugar and corn syrup to a rolling boil, and boiled for 1 min.& 30 seconds. Then combined the other ingredients, poured all of it into a casserole pan. Cooled for 10 min. in the fridge, and cut into squares! YUMMY, Chewy and Delicious! Fantastic!

Easy Oatmeal Muffins

Nice, moist, hearty muffins! I used self rising flour: omitted the salt and baking powder, added 1 Tbl. honey, 1/2 tsp. cinnamon, 1 tsp. vanilla and some raisins. DELICIOUS! They were done after 20 minutes, perfect! My family loved them! Thanks for such an easy, failproof recipe!

Chewy Coconut Cookies

An AWESOME chewy coconut cookie! I pulse my coconut in the food processor for a few seconds first. I doubled the vanilla to 1 tsp, and sprinkled chopped pecans on top of the cookie before baking. My big cookie scoop only gave me 20 cookies. Baked at 13 min. total. PERFECT! also *Self rising flour works great/ omit the salt & baking soda*

Corn Fritters Canadian Style

For more flavor, don't use flour. Use 'self rising corn meal mix' and just omit your baking soda and salt. Do make sure to add some extra sugar to taste. 1-2 TBL. is perfect. You don't need a lot of oil for frying, if you have a good nonstick pan. These corn cakes went great with our white beans!

Completely Delicious! I only added 1 tsp. butter flavoring to this recipe. Incorporate your shortening/butter and sugar well using a mixer. I used a smaller cookie scoop and got nearly 70 cookies out of this recipe. I baked at 400 degrees for 7 minutes only. And take off cookie sheet immediately to cool on wire rack! SENSATIONAL & SIMPLE!

Oatmeal Chocolate Chip Cookies I

Delicious! I made a few changes based on other reviews: Add 1/2 tsp. Cinnamon, Use 'butter flavor Crisco' shortening, Decrease Oats to 1 1/2 cups, and use only 1/2 tsp. Salt. Add 1 tsp. Vanilla extract. The 2 cups of Choc. Chips are a MUST! This is a fabulous classic cookie! The last batch I made I added some chopped pecans-Amazing! I am sure they are a great cookie to make 'As Is' in the recipe, but I'm glad I took the advice of others. This one is going in my Christmas Cookie List to make for the Holidays!

Candy Coated Pecans

Oh My! These are an instant winner with my Hubby and my 3 yr. old! I did follow other user suggestions and: doubled the coating mixture, add 1 tsp. cinnamon and 1/2 tsp. vanilla. YOU HAVE TO BEAT THE EGG WHITE UNTIL STIFF! They look all foamy when you put them down on the parchment paper (use it it's great) but once you stir them a couple of times they are picture perfect. I baked them at 300 degrees for 30 minutes, stirring twice. EXCELLENT and ADDICTIVE, as good as the nuts at the mall vendors! My family said this is something I have to make on a regular basis now! They would go great on a Christmas cookie tray!

Slow Cooker Chicken Taco Soup

Very Good Chili type soup! I added extra tomatoes, and a little more 'heat' to mine. Serve it with a dollop of sour cream and some cheddar cheese shredded on top. Great to dig in with some tortilla chips! Reminds me of a Baja Chicken Enchillada soup that I love!

Easiest Peanut Butter Fudge

AWESOME FUDGE! fudge was super easy to make. I followed all directions, except I did follow some users suggestions of: 3 cups of pwdr. sugar, 1 cup peanut butter, 2 cups brown sugar. I also used Evaporated Milk, gave it a richer taste! I used my mixer to incorporate the hot mixture w/ the powdered sugar. It became very smooth and cooled quickly. Line your pan w/ plastic wrap or foil for easy clean up and smooth appearance. I used a 9 x 13" pan and it made the perfect thickness for us. Fantastic Fudge Recipe!

Magic Cookie Bars II

Scrumptious!! WOW! I know these are not something you eat everyday...But when you want a sweet treat, these fit the bill for many cravings! Chocolate, coconut, graham crakers, etc.! I did use PEANUT BUTTER CHIPS instead of butterscotch. Fantastic! I also followed another reviewer's tips to add the butter to the graham crackers, mix well, then press into the pan. Keeps the crust together more! And for a 9 x 13" pan you will need the whole can of sw. condensed milk. They are AWESOME! thanks!

Best Brownies

Fantastic Fudgy Brownies! These are so the best brownies! They are so much better than a 'box mix'. I doubled the entire recipe, adding 1 cup chopped pecans, and 1/2 cup semi-sweet chocolate chips, put it in a 9 x 13" pan and baked at 350 for 25 min. Once they cooled, they were perfect. I cannot say enough good things about these brownies! The proof is in the ratings! Thanks!

Oatmeal Peanut Butter Cookies

OMG these cookies are phenomenal!! They are so soft, and very peanut buttery! I added vanilla extract & used butter flavored Crisco for the shortening...other than that, I made as recipe was written. My p.b. cookies usually turn out dry, but these are moist, soft and deliciously decadent! I did add some dark chocolate chips to my last tray of cookies, very rich! The recipe as stands is awesome! Thanks for this 5 star recipe!
