Buttermilk Oatmeal Muffins
A great HEARTY muffin! Not like a sweet cakey muffin, but wholesome tasting. I always add some vanilla & cinnamon to mine. Usually some chopped nuts and sometimes frozen blueberries or chopped apples, even bananas. It's a very forgiving, versatile base recipe to start with: then add in what flavors you like. Just remember to SPRAY the liners inside w/ cooking spray before adding in your batter, or they will stick! My 4 yr. old loves eating them, and I feel good serving them :-)

Pineapple Upside-Down Cake V
Sensational Cake!! I used twice as much coconut as called for *awesome* I put the whole cake in one 9 x 13" pan. I also used Pilsbury yellow cake mix, definitely the best! I used one large can of pineapple chunks for the cake. I added 1/2 cup of pecans to the coconut, brown sugar, butter mixture in the bottom of the pan. Everyone thought this was the best cake ever! So moist and so flavorful, the coconut is a delight in this cake, it adds a crunchy sweet surprise when cooked w/ that brown sugar & butter! When it was done I flipped the whole cake over on a cookie sheet lined w/ parchment. *add the melted butter, brown sugar, coconut, pecans, then the pineapple, then the mixed cake batter.* It took about an hr. to bake at 350 for the 9 x 13" pan. It's delicious :-)

Waffles I
Super Delicious recipe! I used SELF rising flour and omitted the salt & baking powder, and it worked perfectly! I also beat my egg whites seperately and folded them in last. Based on other reviews I used 1 tsp. vanilla and 2 Tbls. sugar. I folded in 1 cup of frozen blueberries at the very end and cooked in my waffle maker for 5 minutes. AWESOME! My waffle maker made 8 waffles using this recipe. This one is a keeper and will be my regular waffle recipe. Super easy and superb! If you add in blueberries-leave them frozen. They make for a really great Blueberry waffle!
