Mom's Smoked Oyster Stuffing

Very salty and too much sage. The smoked oyster flavor is fairly subtle in this. Easy but I won't be making it again.

Favorite Mexicorn Chip Dip

Was a bit bland in taste and unappealing to the eye. Ingredients MUST be drained well or you'll end up with a watery-looking dip, making iteven more unattractive. I used 1/2 cup sour cream and 1/2 cup mayo, and doubled the cheese but it still needs something to boost the flavor... garlic? chopped green onions?

Cindy's Awesome Clam Chowder

Excited by all the great reviews, I couldn't wait to try this. Although it was good, with every mouthful I tasted a "chemical" taste. Knowing it had to be the dry leek soup mix, I checked its ingredients. It contains chemicals like sulfites, monosodium glutamate, disodium guanylate and disodium inosinate. Many people have adverse reactions to sulfites and MSG. As someone who tries to eat a healthy, natural diet and avoid chemicals as much as possible, I will make my clam chowder from scratch and not use this recipe anymore. Just couldn't get past the underlying chemical taste this had.

Mexican White Sauce

I've had Mexican white dip with tortilla chips in both Hampton Roads, Va. and in Maryland. This is definitely not it. Too much oregano (it's supposed to be Mexican, not Italian!) and the restaurant white dips I've had are thicker and very white - thus the second time I made this (trying to get it closer to the restaurants' versions), I reduced the milk to 1/4 cup, omitted the cumin which the very-white restaurant versions obviously don't have, and reduced the oregano to 1 tsp. The first version was far too spicy hot so I reduced the red pepper flakes down to 1 tsp. My 2nd version was much better but still not like the restaurants' dip. The Miracle Whip flavor is too intense, so in my next attempt I'm going to use 1 cup Miracle Whip and 1 cup sour cream to see if that helps. (I love the restaurant version and really want to get the recipe as similar as possible.) The recipe was a starting point but needs more work. This recipe makes a ton so you may wish to half it. It can be served with tortilla chips or small pretzel squares.

Latin-Inspired Spicy Cream Chicken Stew

Hubby really enjoyed this. I used an 8 oz. block of cream cheese and substituted boneless thighs for the breasts and frozen (thawed) corn instead of canned. Next time I will add even more cilantro. I shredded the chicken before serving. The day it was made I thought it was good, but it definitely tasted better the next day. It filled my crockpot to the brim.

Grandma Jane's Kicked Up Tomato and Cucumber Salad

Deliciously different tomato and cucumber salad! To simplify it, I used a 4.3 oz. bag of real bacon bits instead of cooking bacon and crumbling it. Of course, I didn't have the 1 T. of bacon drippings to add but that just made the dish healthier. Omitted the cumin. Reminded me of a BLT with the mayo, tomato, and bacon flavors. Just be sure to de-seed the tomatoes and drain off as much liquid as possible before adding to the salad to minimize the wateriness of the dressing.

Mom's Black-Eyed Peas

This is delicious and filling. However, it had a lot of meat in comparison to the black-eyed peas, even though I decreased the meat down to 2 lbs. I think an extra package of black-eyed peas could be added since this is called Mom's Black-Eyed Peas" and not "Mom's Beef with Black-Eyed Peas". The butter is the key to this tasty dish!

Maria's Cucumber Salad

Quick, easy, refreshing salad. Would be good with a Mexican meal. Hubby even loved it! Since I was using local, organic cukes (and not the grocery store cukes with the wax coating) I opted not to peel the cukes because there are nutrients and fiber in the peel. However, I must say that it would have been better if I had peeled the cukes as directed.

Hot Pizza Dip

Made this for New Year's Eve. Flavor was alright but both hubby and I didn't think this was a keeper. It was fatty and heavy. (I did microwave the pepperoni on absorbent paper towels for about 20 seconds to release some of the orange grease but it was still fatty and heavy, due to the 3 cheeses and pepperoni.) Serving it with Tostito scoops even made it seem greasier/heavier. Preferred pita chips with it due to that reason.

Day After Thanksgiving Turkey Pho

I had a very large turkey carcass, so I needed more than 8 cups of water to cover it. Perhaps that was the reason that the broth itself didn't have much flavor, or maybe more cardamom pods, cloves, star anise pods, ginger, fennel and cordiander seeds are needed? I feel that I could have omitted the turkey carcass and the boiling for 2 hours and just used a carton of chicken broth since the flavor of the spices was so very subtle in the broth.

Heavenly Chicken Salad

Made this with leftover Thanksgiving turkey. There is enough crunch from the water chestnuts and almonds so I omitted the celery. I had some shortly after I made it, and the water chestnuts distinctly tasted like the lemon juice. However, when I had some the next day, all the flavors had melded together perfectly and it was awesome! (I didn't add the grapes when I made it because I've done this before to other chicken salads and it makes it a bit watery and unattractive. So I just add in some grapes right before I serve it.) This chicken salad is much better the next day. Thanks for posting the recipe!

Hatteras Style Clam Chowder

I went to a country-style buffet in Gloucester, Va. where this was served. I had never had anything other than the New England or Manhattan styles. I loved this different style and went searching for a recipe, and Allrecipes did not let me down. Thank you so much for posting this recipe, ODella! I used mostly clam juice but did supplement with some chicken broth. Because I like a thick chowder, I did reduce the clam juice/broth by probably one quart. I first fried the bacon til done, then removed it and sauteed the onion, celery and carrots in the bacon grease, then proceeded according to the recipe. The restaurant I went to had what appeared to be a strip of fat-back floating in the chowder (bacon grease and fat back are a southern thing!) but I didn't use the fat back. Tastes even better the next day.

The Best Vegetarian Chili in the World

My hubby declared this to be "outstanding" (and he's a meat lover). It is better the next day. Based upon some previous reviews, I made the following adjustments: added about 1/2 cup of fresh cilantro and 2 shredded parsnips, used red peppers instead of green, increased the cumin to 2 tsp., omitted the jalapeno, increased the garlic to 4 cloves, added 1 T. brown sugar, reduced the chili powder by half and only used 1 tsp. of salt. I also used diced tomatoes instead of crushed and rinsed the beans. Added 2 zucchinis cut into fairly large chunks and omitted the vegetarian crumbles. Even without the jalapenos it was still quite spicy. Be sure to slice the celery thinly, otherwise they will be crunchy. Remember to stir the chili occasionally so it won't stick to the bottom of the pot. Might add shredded carrots and sliced mushrooms next time.

Mojito Salad

Interesting to try since I love mojitos. Did taste a lot like a mojito, but it was a bit bitter to me and lacked color. The apples were the best part of this, crunchy and mojito-flavored. Maybe using firm red and yellow apples (unpeeled to add some color), and combine the lime zest & juice and simple syrup together first before adding to the salad would help. (I omitted the lemon juice.)

Cocojito (Frozen Mojito)

Hubby and I really liked this. The coconut flavor was faint. Next time I'll remove the stems from the mint sprigs and just add the leaves. Be sure to remove all the white pithe from the limes so your drinks won't be bitter.

Troy's Slow Cooker Chicken

Tasty and easy to make. The bacon, though, looked raw and unappetizing even after 5 hrs. in the crockpot. Fine for hubby and I because we knew the bacon was fully cooked, but if serving to a guest it may be unappealing. Makes plenty of gravy.

Erin's Year Round Party Dip

I made this for hubby to take (and bake) at work. While making it, there seemed to be a ton of cheese on this, but hubby likes cheese so I used it all. His and his co-workers' comments were that they loved it, and that it was very cheesy but they didn't mind that. Two men suggested having jarred sliced jalapenos on the side for those wishing to add them. One man said you could substitute venison for the "hamburger" meat, that's when hubby 'fessed up about the buffalo meat (undetected by all). He did have to significantly increase the baking time, perhaps because it had been refrigerated prior to baking. The only change I made was decreasing the water by half because I didn't want runny cream cheese, and 1/8 cup water worked very well. Hubby said that because of all the melted cheese, it was hard to dip a tortilla chip into the dip, so he grabbed a metal teaspoon, placed several tortilla chips on his plate and spooned the dip onto the chips, and other men began doing likewise. They scraped the pan clean! This was easier to make than the traditional 7-layer taco dip, and serving it heated was nice also.

Russian Potato Salad from Costa Rica

A unique potato salad. As one reviewer suggested, I used pickled beets which really had a nice flavor. I think regular beets would be too bland. Tasty, interesting to try, but I prefer a more traditional potato salad.
