Basic Crepes

We have a couple of people in our family that cannot have wheat gluten, and this recipe converted easily and deliciously! I substitute a gluten-free flour mix (in my case Bette Hagman's Featherlight) plus 1/4 tsp xantham gum. I think that any gluten-free mix would work. Additionally, the gluten-free crepes hold up well, which isn't always the case with GF. I now make up a huge batch and store them in the fridge to use for lunches and breakfasts during the week, PBJ, Nutella, Ham & Cheese, Burritos -- so easy and so satisfying!

Pesto

This is my all time favorite pesto recipe. The flavor is perfect every batch. I make extra batches every summer so I can freeze it (in ice cube trays) and have it all winter.

Bacon-Wrapped Asparagus

Ginger Snap Cookies

These are really good! I got tired of grating ginger so I did about half fresh grated and half bottled ground fresh ginger. I chopped the crystallized ginger as small as possible so there woulnd't be any big bites of spice. My kids absolutely love them!! Using a rounded teaspoon, the recipe for 48 cookies actually yields close to 120 cookies!

Banana Banana Bread

I made this recipe since I didn't have any sourcream or plain yogurt for the other highly raited banana breads, and I wasn't disappointed at all. I used five bananas, because that was all I had, and I added about 1 cup of chocolate chips and it was truly divine!

Balsamic Roasted Red Potatoes

These are wonderful! I made these for several special occassions during the holiday season. I brought them to Christmas dinner at a friends' and I did almost all the roasting at home, pulled them from the oven, put the balsamic mixture in a tupperware, tossed the dressing and potatoes together at the friends' house and finished the roasting in their oven.
