Zucchini Herb Casserole

This was a huge hit at our house even though I had to leave out the cheese to make it dairy-free due to allergies. I added Italian sausage crumbles to compensate but wish I hadn't because the kids just picked out the zucchini and gobbled it up. I did double the spices as suggested and would recommend that change. Will make again and again all summer and probably blanch and freeze zucchini just for this recipe. Thanks!

Chocolate Frosting I

This was not the dark fudge frosting of my dreams. It's too sweet and not chocolately enough as written. Heeding advice, I added 2 TBSP dark coffee, and decreased powdered sugar. Still not happy, I ended up adding another round of butter and cocoa and then it could stand up to the Black Magic Cake on this site. I will keep looking.

Black Magic Cake

This is just what we were looking for. I don't keep buttermilk on hand so I soured a cup of whole milk with 1 TBSP vinegar. Very dark, moist and delicious. Not real dense, which is the only quality missing to make it a perfect cake.

Blue Ribbon Overnight Rolls

The little dough boy just stopped giggling! He's going to go out of business because these are what Pillsbury crescent rolls aspire to be. These are so easy (no kneading, yes!), I couldn't believe how good they turned out. Next time I will roll in a little cream cheese and jam, or maybe cocktail wieners and cheese!

No Fail Pie Crust II

I've used this recipe for several pies now and will probably use it for life. It truly is no fail and is just as good thawed as fresh. We don't do lard (pork) so I used vegetable shortening and it worked great. One minor complaint: it was a little salty with a very sweet butterscotch pie, but was perfect with apple pie. As a top crust it was wonderfully thick and flaky. I love recipes like this that make us novices feel like the pros!

Apple Pie by Grandma Ople

This recipe lives up to its reviews. I did not find it necessary to mix the sauce with apples, just poured it over the top. Six granny smith apples were plenty. I did follow the advice to add 1 tsp cinnamon, 1/2 tsp nutmeg, and 1 Tbsp vanilla. It's all I can do to not eat the whole pie right now!

Butter Lamb Gravy

We liked this a lot. It's a great dish because it has good flavor in minimal time, and would work with any meat. I will definitely make this again. It tasted great in the pot, but seemed a little bland when served over rice, so for our tastes we will triple the spices (I already doubled them). I made this on a whim and had to sub plain yogurt for the creme fraiche and skip the cilantro, so I can't wait to try it as the author intended. Thanks for the recipe!

Grandma's Butterscotch Pie

This is a great recipe because every ingredient should already be in the pantry. Only 4 stars because it was too sweet for me. Next time, I'll follow others' advice and cut the brown sugar to 3/4 cup, and maybe even 1/2 cup. My picky husband really liked it. I wasn't sure how thick the filling should be. I cooked it until it was like yogurt, but should have cooked it a little longer. It set up ok, but I would like it more firm. It also wasn't as dark as the picture, so probably the longer in the pot the better.

Kashmiri-Style Kidney Beans with Turnips

The flavor is unique and delicious. This recipe provides a nice change of pace, and we will definitely make it again and again. We might try adding some carrots or some lamb, as the base seems infinitely adaptable.

Chicken Enchiladas I

My picky husband loved this and couldn't stop saying "Fantastic!" My toddler kept asking for more. It has a lot of flavor. I read the reviews saying it may be too watery so I waited to add the sour cream and cheese until after I had cooked down the tomato sauce and water. Next time I think I will try it as written because it was almost too dry. This is a keeper.

Festive Prune Cake

I have made this once so far, following the review that suggested subbing 2 tablespoons cocoa for the nutmeg, etc, stewing the prunes in the prune juice, and halving the sugar. This came out delicious. I topped with Cream Cheese Frosting II from this site, but would be fine plain. I was expecting a pumpkin or banana bread type texture but it yields a moist and fluffy cake which calls for topping. This recipe is great for using up prune juice because a whole bottle is hard to finish!

Terrific Turkey Meat Loaf

I won't be looking for any other turkey meat loaf recipe. This was great. I usually don't like veggies in meatloaf unless they are sauteed first, but I chopped everything very fine in a food processor and the flavor was good. I used oatmeal because I don't stock oat bran which worked fine.

Indian Tomato Chicken

I've made this several times now and my husband loves it. I've followed the advice of others and simmer 45 minutes covered and 45 uncovered. This recipe as written does not make a lot of sauce, so I have also doubled the tomato and spices with good results. Easy and delicious.

Perfect Berry Shortcakes

I did not expect this recipe to work for me since I'm usually pastry challenged, but it was easy and surprisingly quick. I grated cold (not frozen) butter and used whole milk (all I had on hand). Delicious! I did not find it dry or dense as some other reviewers. Moister and lighter than a typical scone.
