My cooking triumphs
Fried foods.... I finally found the key to light fried pork chops and chicken cutlets. For years I enjoyed this treat only occassional because of the time and the guilt of eating these fried yummies - now I've learned how to pan fry these dishes with less guilt and way better results!
My cooking tragedies
My first time cooking pork chops in a gas oven I was serving charred hockey pucs - I've come a long way!

Eggplant Parmesan II
This was a great way to make eggplant without having to fry it! I followed some of the other suggestions and baked it for longer than suggested. I baked at 375 for about 9 minutes on each side. I also coated the pan with olive oil before baking & it gave it a nice golden brown color. I also sliced the eggplant and coated with sea salt and allowed to sweat for 15 minutes. Instead of using this eggplant for Eggplant Parm I instead layered it in my lasagna. Great way to sneak some more veggies into the kids favorite meals! Thanks for sharing - its a keeper!

Black Bean Salsa
This is a great recipe! Even my picky husband enjoyed this salsa. I have been looking for a black bean recipe and this one was the perfect find. I did make a few changes by using fresh corn from our garden (boiled and cut off the cob), lots of fresh cilantro, 3 cloves fresh garlic and a splash of red wine vinegar. This will be a new staple in this house! Thanks for sharing!

Country Fried Steak and Milk Gravy
We made this for dinner tonight and it was great! The only changes I made were that I added white pepper to the flour mixture and I deep fried it my Presto instead of using the lard. The whole family loved it. Bravo!
