Quick And Easy Mexican Chicken

This was REALLY good! I went an extra step and made my own salsa instead of using store-bought salsa. That gave me the extra texture and freshness I like in veggies. :)

Man Pleasin' Jambalaya

This recipe was AWESOME! The only change I made was to omit mushrooms and to use chipotle powder in place of cayenne pepper. I've made this twice and it's been a HIT!!

Honey Wheat Bread III

I tried this recipe twice. The first time, the result was very dense. I customized the recipe by using only 1 cup of wheat flour with 3-4 cups of bread flour. I also proofed 2 pkgs of yeast in 1/2 cup of water. I used 1 2/3 cups of warm milk, 2 tbsp of oil, 2 tbsp of honey and 2 tsp of salt. All of that yielded about 2 loaves. They didn't rise as high as the bread in the picture, but they were light and fluffy with a touch of wheat-ness! Great recipe over all. Easy to make.

Home-Style Yeast Bread

I've tried this recipe twice...once with all-purpose flour and once with bread flour. I've learned that bread flour is definitely the best one to use. We LOVE this bread. The 3 loaves are usually done in about 4 days or so! This recipe is definitely a keeper!!!

Tangy Coleslaw

This was a very quick and easy recipe. I changed it up a little bit for our tastes: (1) Used 1/4 cup of white vinegar since I didn't have cider vinegar, (2) Added 1/2 teaspoon of honey to help cut the bite of vinegar, (3) Added two big servingspoons of Miracle Whip to make it a little creamy, (4) Used a liberal amount of dried chives since I didn't have any fresh onion. This cole slaw was delicious!!
