when I was about 13 I decided to help out by making fried rice for dinner. I'd watched mum do it lots of times so I thought I would find it easy. Guess what I didn't do? Boil the rice...I'm not kidding. Enough said...

Pineapple Shrimp Rice Bake
This was an interesting dish, with ingredients that I wasn't sure would go well together. But, it turned out very nice and we thoroughly enjoyed our meal!

Veggie Vegetarian Chili
I loved this dish! I did have all types of beans on hand but it still turned out lovely. Oh, I added jalapenos and small can of corn kernels :-)

Apple-Glazed Pork Chops
This recipe wasn't to my taste. I would have liked it more if the apple glaze was an apple sauce/puree consistency. Having the apple sliced didn't do it for me. That said, I liked the cider, thyme, and rosemary marinade, so maybe I can just do this part next time.
