Beef and Bean Chimichangas

Yum! I followed this recipe as written, subbing green chiles for the green pepper, and tossing the whole shebang together rather than putting the cheese, beans, and meat mixture into the tortillas seperately. I quadrupled the recipe, fried some tonight, and will freeze a bunch to bake or fry later. Very good, thanks!

Chocolate Cherry Cake with Rum Ganache

Excellent! I made this cake as written, except used mini chips instead of the chopped chocolate inside the cake and use rum flavoring instead of rum for the ganache. Mine did not turn at all red like the photo, so I'm thinking there was some food coloring used there. I made this for my husband to take to work - and it was almost gone by 11am. Thanks for the recipe!

Mexican Veggies with Queso

Yum! I made this as written except for cutting my veggies a little chunkier than called for because I like them barely cooked - and I also put the chopped tomatoes at the very end because I had a tomato-hater in the house. This was my first time eating hot jicama and I really liked it in this. Asedero cheese behaves similarly to an American processed cheese, so subbing with a processed Jack cheese would bring you close to the intentional flavor and texture of this dish if you are unable to get Asedero . Thanks for the recipe - delicious!

Seafood Marinara Pasta

Delicious! I made this as written, only adding black pepper and crushed red pepper for a little heat. The sauce is wonderful and the seafood is perfectly cooked. I threw a little chopped parsley on when I served this. Excellent! Thanks for the recipe!

15-Year-Old Pesto Sauce

Very good basic pesto. Slightly heavyhanded on the salt, but I didn't find it way too salty. We had this with tomatoes and goat cheese tonight, and I plan to use it with a pasta next week. Thanks for the recipe!

Plum-Glazed Country Ribs

This is a great quick-&-easy sauce for ribs. I added a lot more heat for our preference, but followed the rest of the recipe exactly. Our ribs were boneless, and fall-apart tender. Excellent, thanks!

Coleslaw with Hot Caraway Vinaigrette

We really enjoyed this. I made it as written and thought it was a little heavy on the oil and light on the vinegar for me - easy enough to adjust. I loved the way the veggies wilted a little when the warm dressing was tossed in. The caraway and mustardseed are delightful, but don't make this salad if you don't like them (duh). Thanks for the recipe!

Chicken Potpies

I had a lot of fun with this recipe. I was sucked in by the little crust "hats," so I amused myself with that part of the recipe (if you are not easily amused, this recipe is not nearly as fun - ha). The pie filling itself is pretty classic, which is nice and comforting, but can use some freshening up. I used fresh mushrooms, carrots, and red bell pepper, and added a little fresh parsley (I stuck with frozen peas) - so all of the written flavors are there, just done to my preference with what I had. I wish my photo was better because these were pretty cute. Thanks for the recipe!

Spinach Salad with Peaches and Pecans

This is a great combination. I made my own poppyseed-lemon vinaigrette and it was really good. I think this salad does beg for cheese, though. We ended up throwing some blue cheese on it; feta or parmesan would also be lovely. Thanks!

Coconut Bread Pudding

Yum! I made this as written, except I used all flaked coconut because I couldn't get any fresh. I topped this with a little coconut syrup and whipped cream when I served it (just to be totally evil), but it is also perfect on it's own. Thanks for the recipe!

Herbed Greek Roasted Potatoes with Feta Cheese

Excellent. I followed this recipe exactly as written (even though I was a little nervous about adding the water to it), except I used dried mint and oregano in the oven and topped with a little more fresh mint when they were finished roasting. Perfectly done and perfectly flavored. Thanks for the recipe!

Roasted Roma Tomatoes and Garlic

Delicious. My tomatoes and garlic were perfectly roasted in 40 minutes. A big hit with my oldest son. I think cheese would be a nice addition, but these are also really nice and fresh-tasting without it. Thanks!

Kalamata Pork Tenderloin with Rosemary

Really good - the sauce is great. I do agree with the reviewer that thought the sauce takes a little long to have your pork just hanging out waiting. I would probably make the sauce first next time, using flour and oil or butter rather than relying on the floured pork. I'll probably just roast a tenderloin in the oven and serve the sauce over it and forget about pounding and flouring altogether. Still, this is a great dish - well worth making. Thanks for the recipe!

Mushroom Omelet

This was very good. I had some crimini mushrooms that needed to be used, so I searched this recipe out. The caraway seed is interesting, I had never tried it with mushrooms before. I made this recipe as written, using the mushrooms I had and folding my omelette into quarters. Thanks - I would make this again. :)

Bacon Tomato Chowder

This is a great idea that doesn't quite hit the mark without (at least) doubling the tomatoes. We enjoyed it very much after some tweaks, but there are several chunky tomato soups on this site that would take this idea and roll with the addtion of bacon. Tomato Bisque III comes to mind, since I've made it and garnished it with bacon already. A tiny bit more effort is totally worth it. Thanks for the recipe, anyway! :)
