Apple Stuffed Chicken Breast
TERRIFIC!!!! Wonderfully quick and easy meal to prepare for those with kids or a busy lifestyle. I made a few minor alterations.... 1) I used chicken breast fillets that are already cut as it saves on time and they're less expensive. 2) I used a GrannySmith apple and in the stuffing I added Cinnamon, brown sugar, all ground spice, black pepper and thyme (just a bit more than a pinch of each...perhaps 1/4 of a teaspoon). I also increased the bread crumbs to 2.5 tblsp and a little extra cheese 3) I used Sherry Wine for a robust flavour and chicken stock (low sodium) when cooking 5) When making the gravy I did use cornstarch but I also added the remaining apple chunks which completed it nicely. 6) At the end I added more wine and slightly more chicken stock as I like to have extra gravy and I cooked it for 20 min when 15 would've been fine so the liquid had evaporated more. I paired the chicken with Uncle Ben's Wholegrain Brown Rice - Vegetarian Medley and sliced the chicken to show off the stuffing. My 2.5 yr old gobbled up an adult plate size!!! Simply Excellent. It will impress anyone you cook it for. Thk you.

I added a few things to the mix (although it would be fine on its own as written). I did as others by adding W.Sauce and breadcrumbs but I also included garlic powder rather than minced (didn't have any), some onion powder, oregano, parm cheese, black pepper and parsley flakes....not a lot of the above (personal preferance). Whats great is that you can add any seasoning you want to this recipe and it'll work. FOR KIDS....I have a 2 yr old so I made mini-burgers, froze them individually along with dinner rolls for buns. So, in a quick fix I can pull one or two out and serve it with rice (or sweet potato fries) coupled with some veggies.

Best of the Best Blueberry Muffins
Great Recipe!!! I also made some additions. The first time, I added about 1/2 tsp of cinnamon and 1 tsp of pure vanilla extract....add as much as you like for personal preference. The 2nd time, I didn't have white sugar, so I used 1/4c of honey to blend with the egg and butter and a little bit of brown sugar (which if you're diabetic you can omit) plus, I added some Real Lemon juice - about 2 tblsp. In both cases, I used frozen blue berries, slightly thawed, which I believe allowed the muffins to remain moist and added 1/4 tsp of baking soda.
