Special Buttercream Frosting
WOW is all I can say. I have never made buttercream frosting before and I'll never look for another recipe after making this one. After reading other reviews, I nixed the shortening for unsalted butter and kept everything else the same, apart from using real vanilla extract. I made the entire recipe, and it was way too much for my cake so I have a whole tub of leftovers! Next time I'll cut it in half for my chocolate cake. Thank you so much for this recipe. You made me look like a culinary genius and my family LOVED the cake. This is my go to dessert from now on.

Mexican Mole Sauce
I had never had mole before but wanted to try it. My husband and I really liked it! After reading reviews, I used this recipe as a base and made some adjustments. I used 1oz of unsweetened bakers chocolate instead of liquid chocolate and melted it in the microwave. I also used tomato sauce, fresh hot peppers, fresh garlic, deleted the cilantro and added cayenne pepper, cinnamon, coriander and pepitas. We put it over chicken, brown rice, pepper jack cheese and avocados. Thanks for inspiring me to try something I've been curious about.

Flourless Peanut Butter Cookies
Delicious, heavy cookies. I cut the sugar to 3/4 cup to cut out some of the sweetness. Next time I'll be sure to add some vanilla too. I got a dozen cookies out of the original recipe, and I'll be making them again. Thanks!
