Grilled Bacon Jalapeno Wraps

Reviewed: Oct. 4, 2011
My neighbor makes these all the time. He makes a variety pack, so to speak, using different cheese like cheddar, pepper jack, and cream cheese. He salts the peppers for a little more heat and wow, its a delicious punch. I cannot wait to make these myself.

Easy Batter Fruit Cobbler

Reviewed: Oct. 4, 2011
All I have to say is YUM. I was a little worried about how it would turn out but not a single complaint. I read that if not eaten right away it gets soggy, but mine was still perfect for breakfast. As always I used this as a base, used 1 cup flour because it seemed a little too wet for me, most likely used way too much butter on accident because I really didn't measure it, which made the crust a little crunchier and a little buttery in flavor. I also added nutmeg, vanilla, and cinnamon to taste, canned peaches, and sprinkled with a little brown sugar. The recipe was not really altered and it was fantastic. I will be making this again.

Irish Cream Bundt Cake

Reviewed: Mar. 12, 2011
Didn't change a thing except for adding a smidgen more Irish Cream when making the glaze because I wanted a stronger flavor. I just took out half of the 1/4 cup water and replaced it with the I.C. Loved every bite. Thank you for sharing this. I could not think to change anything.

It could have had more flavor, but it was a last minute-toss everything together morning. A good starter to something better.

Meatloaf with Fried Onions and Ranch Seasoning

Reviewed: Dec. 11, 2010
I saw this recipe and remembered I already had the onions so I gave it a try. I used BBQ instead of ketchup because I am not a ketchup fan. My family loved it, including my already picky 1 1/2 year old daughter. Will be making this again! Oh yeah I topped it with a little cheese only because we adore cheese in this family.

Shepherd's Pie Complete

Oh so yummy. I assembled it a little differently and halfed the recipe because there were far less mouths to feed that night. I did only use one can of gravy or it would have been too soupy.

Shrimp Scampi V

Reviewed: Dec. 5, 2010
I made it as is and it was great. I reduced the sauce a little and it was perfect. My mistake was thinking I could save time by using cooked shrimp and they ended up overcooked, but that was my fault.

Beef Enchiladas II

Reviewed: Nov. 28, 2010
I didn't pay attention and made this with corn tortillas. I suggest dipping the corn tortillas in the enchilada sauce to keep them from breaking. I am trying to get my family to eat more fiber so the only intentional change I made was adding some vegetarian refried beans to the inside. Everything else was exact and yummy.

World's Best Lasagna

Reviewed: Nov. 16, 2010
Everyone loved it. I left out the fennel because I am not a fan and there was some already in the sausage. I also prepared this the night before so I cooked the meat and added the sauce, but didn't cook the sauce since it was going to sit overnight anyways. I also cooked the noodles a little to soften them but let them soak up some of the moisture while sitting too. I didn't use the sliced mozz because I accidently got the shredded.

Banana Banana Bread

Just sampled the bread I took out of the oven about 30 minutes ago and WOW!!! it was so darn good. I wish I made more. I like mine with nuts so next time I will make sure to add them, but this was great. I did add a cap of vanilla and a dash of cinnamon. Perfection...Just made it again and its still WOW! Can I give it more stars?

Florentine Artichoke Dip

This was sooooo good and gooey. I did rinse the artichokes before cutting them. Used only 1 cream cheese, added 1 cup shredded jack cheese, added 1/3 cup sour cream, and about 4 tsp hot sauce. It was gone minutes after I served it.

Glazed Chicken Wings

Baked 2o minutes at 400 turning half way before added sauce. Then finished at 350 til cooked. When done I broiled for a few minutes after adding a little more sauce just to crisp up the glaze a bit. Seasoned the meat with garlic and onion powder before baking.
