Baked Tofu Bites
I loved it, but more importantly, my six small children AND my two teens loved it! They didn't realize it was tofu, until the entire tray was gone. I usually use the cubed tofu, and serve as appetizers with toothpicks. Couldn't be quicker, easier or tastier. Also great in casseroles and salads.

Amish Breakfast Casserole
I made this for Christmas morning, and my family absolutely loved it! It was so easy, because I had cooked the bacon/onion mixture, along with a little red pepper, the night before. I also added a little leftover Christmas eve ham. I've tried other egg bakes, and have never found one I like! This one is the best! This will be a staple for special weekend breakfasts!

Chicken Parmigiana
I love the simplicity of this recipe! My children, all eight of them, love this recipe! The changes I make are to add seasoning to my bread crumbs, when coating the chicken, and baking the chicken without sauce. I add my own homemade, organic spaghetti sauce when serving, along with freshly grated parmesan. This keeps the chicken from becoming soggy. I serve with spelt linguine.
