I hate regular pizza... mostly because of the sauce, but I LOVED THIS. We made the Smoky Chipotle Hummus recipe from this site. Used Mozerella cheese. Tossed all the veg (red pepper, broccoli, mushrooms, spinach) in olive oil and minced garlic. Grilled on the George foreman and put on pizza. Used Pizza Dough I from this site as well. IT WAS AMAZING!

West African Peanut Soup

As written, it was WAY WAY WAY to peanut-buttery. I just felt like I was eating hot peanut butter, but there is potential for this dish yet. I recommend to anyone making this for the first time to ADD THE PEANUT BUTTER SLOWLY WHILE TASTING IT. The bites I had with red peppers or tomatoes in them were good, but just too much peanut taste otherwise.

This was just okay to me. I think it could be better by increasing (doubling?) the spices except the cayenne (unless you really like spicy). I love potatoes so this still was fine but not very flavorful. Had no trouble with the potatoes being undercooked at the end. Came out great.

Tasty. Cut into strips, we've found that it needs a lower temp (400) and shorter cook time (30-40 min) or they will burn!

Veggie Pot Pie

Who knew this was so easy? Takes a bit of time, but 2 of us ate for 3 days on this. I upped the cornstarch per other reviews to 3 tbls and it turned out great.

Spinach Enchiladas Verde

For something so simple, this was incredibly good! Hardly any prep work if you buy pre-grated cheese! I used a little more salsa than the recipe called for and a little less cheese, but still great. Made in casserole form because corn tortillas are evil ;) To those who said it was mushy, I use whole fresh baby spinach and really mash it down into the dish, it held up nicely.

Oatmeal Pancakes II

These were so gooood! Much better than regular pancakes. I used low-fat buttermilk and added 1tbl of brown sugar. Good plain, with syrup, jam, or some unsweetened applesauce.

Easy Mashed Potato and Roasted Vegetable Enchiladas

Good. I followed the recipe except I made fresh mashed potatoes instead of instant, blanched the carrots for a couple minutes before roasting so they veg would get done quicker, and made it a casserole. I think it needs more mexican spices because the enchilada sauce we used didn't do the trick. I'd add some taco seasoning to the mashed potatoes and maybe some cumin and chili powder to the roasted veg next time.

Pumpkin Parfaits

Reduced servings to 2 which may have caused a problem with my results. Used non-fat cream cheese and think it was the big problem as it did not solidify with the marshmallow fluff upon refrigeration. Also, I don't think the orange concentrate is needed or at least reduce the amount to half. If i did it again, i would add a little brown sugar to the pumpkin instead of the maple syrup.

Cheddar Tomato Dumplings

This was a good, simple recipe, but I think the tomato sauce needs a little seasoning and spice. We doubled the onion, used a red pepper because that's all we had, added 1tbls garlic and 1 tbls dried basil. Could have used even more seasoning. Next time i will add other spices and add some oregano or basil to the dumplings themselves.
