Brie Cranberry and Chicken Pizza
This was good, but definitely needs some modifications. I got pizza dough from my local pizza shop, spread it with butter and minced garlic and baked at 500 degrees for about 5-7 minutes to keep it from being soggy (make sure to poke dough with a fork before baking). This is better than buying a store bought prepared crust and easier than making your own. As others said, the chicken definitely needs to be seasoned. I used thyme,pepper and garlic salt. I then baked the pizza at the suggested temp. Mine came out very dense, but good.

French Leek Pie
Yum! The only thing I did different was using 2 Tbls of butter instead of 2 tsp to saute the leeks. Very easy to make. Although the cheese is a bit pricey, it's definitely worth it considering all other ingredients are inexpensive. I might try adding pancetta next time. This would be great served with a pear/gorgonzola/walnut salad.

Southwestern Lasagna
Really great with a few additions: I used the diced tomatoes that have onion and garlic added and I added a can of white hominy to the sauce for added texture. After tasting the sauce I had to add a bit more salt and garlic powder. I used corn tortillas and lightly buttered them which kept them soft. Might be nice to add black beans next time. I served this with a side of the Sweet Corn Cakes from this site....yummy meal!
