I love to bake/cook from scratch. Truthfully in all that I do I am my own worst cretic! I recieve great reviews and yet to myself I'm not satisfied with it. I desire perfection in taste. Just a change in type of chocolete and the recipe once so perfect can and up terrible!
My favorite things to cook
Home made dishes with lots of flaviouring. garlic, onions, sweet basil,tyme, greek seasoning...bone stock (soups)..roast beef..spagetti..beef stroggenough..fish and chips..jamaican stlye chicken with potatoe salad and rice&peas..on and on..
My favorite family cooking traditions
Home made europian dishes of soup, roasted chicken, turkey, stuffed peppers, stuffed cabbage rolls..
My cooking triumphs
Baking. Also a number of home made dishes.

Christmas Cake
Made this cake last christmas and with all the additions of nuts I added I am able to make two cakes of 9" pans. The reviews of this cake was endless!! Here are my changes due to my love for nuts and dislike of mix citris. I omitted the cherries. I used my home made orange rind minced fine. Doubled the (orange flaviored)currants used 3-4 cups dates. Addition to the almonds added another 4-5 cups of brazil, pecans, walnuts,hazil nuts..Doubled the seasoning. This cake for me bakes nicely within 2 1/2 hours at 250 degrees. After 2 hours I check to see how it is with a tooth pick or fine knife.

Christmas Nut Cake
I guess I'm within that category of "afew nuts" ... I love nuts but found this recipe to be awful waste of good nuts..dry..waste of money..Having tryed this recipe I will not touch other similiar recipes!

Christmas Cake
Moist, rich flavourfull cake that I recieved rave reviews on. I did afew changes to the recipe..omitted the coloured cherries used about 1/2 cup of home made pureed orange rind to have a touch of orange flaviour through the cake..added (1 cup each )walnuts, pecans, brazil nuts chopped small because I do love nuts ..and I doubled the dates..Last note I found that I didn't need to bake my cakes as indicated they were ready in 2 hours
