Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Our family is following a low-sodium diet and this recipe was perfect with only 1 adjustment. Instead of using the cumin, oregano, salt and chili powder - I simply used approximately 4-5 tablespoons of Mrs. Dash Fiesta Lime seasoning. It is sodium free and has all of those spices (plus more) in it. I was also able to find "NO ADDED SALT" diced tomatoes. I also added about 2 tablespoons of brown sugar at the end - it just gave it a different flavor that I liked. I used lean ground turkey. We will eating this with tacos, salads, wheat egg noodles or brown rice. Would also be nice on a roll as a Sloppy Joe type sandwich or on top of a baked potato. The possibilities are endless! This will be added to our regular "rotation" and I would definately recommend this recipe!

Pistachio Mallow Salad

I made this for a Mother's Day brunch and it was a big hit! I used chopped walnuts in place of pistachios and used multi-colored flavored marshmallows and it was wonderful! Will definately make again!

Super Sausage Gravy

Penne Pasta with Cannellini Beans and Escarole

I was skeptical of this at first. But I was looking for a meatless dinner option during Lent and tried this. It surprised me! Definately sautee some minced garlic in olive oil before adding the other ingredients. I also stir in some grated parmesean cheese to the whole thing before serving. Even better the next day (after all of the flavors have a chance to blend!)

Rosemary Ranch Chicken Kabobs

This is a perfect summertime meal on the grill! We added mushrooms, green/yellow/red peppers, vidalia onion, and zucchini to our skewers! Will definately make again!

German Apple Cake I

Wonderful! This was my first attempt at making an apple cake and it came out perfect! The only change I made was to use 1/2 cup applesauce and 1/2 cup oil. Applesauce tends to make my cakes moist. My co-workers raved about this!

Soft Oatmeal Cookies

WARNING: You will not be able to resist these cookies! I ate 3 right out of the oven and had my husband hide the rest. I added raisins (that I had soaked in hot water) to these and it really complimented the cookies. My family ate these in one day. This will be my permanent Oatmeal Raisin Cookie from now on!

Corn Casserole III

I made this for Thanksgiving this year and was pleasantly surprised! After taking it out of the oven, it didn't seem to be evenly cooked, so I mixed it up and returned it to the oven for an additional 10 minutes. Perfect!

Candy Apple Jelly

This doesn't taste anything like candy apples to me - but it's actually quite delicious! It is definately unique and has more of a cinnamon flavor. Perfect for breakfast parties or holiday gift-giving!

Peanut Butter Temptations II

This is the first time I made these cookies and they came out great! Leave them in the pan to cool for about 20 minutes before taking them out. I put mine on a separate tray and put them in the fridge for about an hour to cool. They are in the freezer and waiting for Christmas!

Cajun Chicken Pasta

This dish reminds me of one of my favorite OBX restaurant dishes called "Alligator Pasta". I was able to lighten it up a bit by using olive oil instead of butter, substituting whole wheat pasta and fat free Half & Half. I took the advice of other reviewers and thickened the sauce with cornstarch. I added some minced garlic and more cajun seasoning. I also added some pepper flakes and hot sauce. (I love spicy/hot food!) To cut prep time, I used 1 frozen bag of sliced multicolored peppers and onions. I also used the pre-cooked Tyson chicken strips. I tossed in 1 diced tomato (seeds removed) right before serving. This tastes just as good (if not better) the day after! (I had some for breakfast!!) Try this - you won't be disappointed!

Flax and Sunflower Seed Bread

Chocolate Covered Strawberries

Mouth-Watering Stuffed Mushrooms

These mushrooms slightly reminded me of the 'Shrooms that are on the menu at Houlihan's restaurant. I followed the advice from others and added the mushroom pieces to the olive oil and minced garlic. Added the dry spices and cooked until almost dry. Added the cream cheese and grated cheese, mixed, cooled slightly and then piped the filling into the mushrooms. Topped with grated cheese and a few breadcrumbs. I served with a mixture of horseradish and mayo.

Eggplant Parmesan II

I substituted ZUCCHINI for the eggplant in this recipe. I sweat the slices as previously mentioned, breaded (added some grated Parm cheese in Italian Bread Crumbs), baked for 10 minutes on each side. Perfect! My husband who normally doesn't eat zucchini had seconds and thirds! Healthier than frying and tastes great! (Made Mom's Zucchini Bread with the leftover zucchini!!)

Mom's Zucchini Bread

Don't look any further for the best zucchini bread! This is SO delicious - I had a piece for breakfast AND lunch! I used 3 cups of zucchini and substituted apple sauce for half of the oil. I also reduced the sugar to 2 cups - 1 cup white and 1 cup brown. I did not add nuts (personal preference) but next time I might try with chocolate chips. The crumb topping really made this bread! I took the suggestion of another and added the topping 15 minutes into bake time. Worked perfectly! So moist and scrumptious!

Italian Wedding Soup I

I've made Wedding Soup before - but this recipe beats them all! I doubled the recipe and used a combo of ground beef, pork and veal for the meatballs. I also sauteed onions and carrots in olive oil before adding the broth to the pot. This has a great taste and is a definate keeper!

Monkey Bread I

This is a simple and easy recipe with minimal ingredients that tastes like a cinnamon roll fresh from the bakery! I took the advice from the previous reviewers and did a single layer of biscuits, then a layer of sauce, then a second layer of biscuits, finished with a layer of sauce on top. I also flipped it upside down immediately after removing from the oven. I can't wait to make this again!

BBQ Pork for Sandwiches

This is a really easy and delicious recipe. I love anything that can cook itself in my crock pot! With minimal work, I made one of my husband's favorite meals and had the leftovers the next day! I split soft kaiser rolls, and put them under the broiler with a piece of American cheese just long enough to melt the cheese and toast teh roll. Then I top with the BBQ Pork. Yum!!!

World's Best Lasagna

This was my second attempt at making lasagna (first time left a lot to be desired). EXCELLENT RECIPE! Easy to follow. I followed the recipe as written - takes a white to assemble but worth the effort! Like others - I also soaked the noodles in hot tap water for 30 minutes. I also assembled this the night before and popped it in the oven after work. I cooked it for a total of 1 hour and 20 minutes (straight out of the fridge). Will definately make again.
