Me and my girl
About this Cook
Mommy, wife, nurse, and just me:) I really enjoy good food, new foods. Healthy foods are important to me and easy recipes. My crockpot and bread machine are my good friends. I do like to try more fancy recipes and invent my own but not much time now with my 7 month old and 4 year old.
My favorite things to cook
Anything with my crockpot. Fresh bread with my bread machine (though I only use the dough cycle and insist upon baking in the oven. Best idea my sister ever gave me). Sweet potato oven fries, oven puff pancakes, chicken fried rice, platanos, quesadillas, anything I can add spinach to, unique salads, roast chicken then my own chicken broth the next day and soup with that.
My favorite family cooking traditions
Thanksgiving with real mashed potatoes, real gravy which I've mastered, pie crust from scratch and a BIG bird et al. My next addition will be pumpkin pie that I got from a pumpkin instead of a can:)
My cooking triumphs
Canning my own pears, applesauce, and peaches (partially from my own fruit trees). Making my own baby food Inventing YUMMY healthy smoothies then smoothie popsicles Anything that makes my husband occasionally truly enjoy food. He'd eat Ramen and McDonald's for weeks before complaining.
My cooking tragedies
Lately the new baby sleep deprivation has manifested in the kitchen. I make a whole meal and throw it in the crockpot and turn it on but forget to plug it in, use the bread machine without the dough hook, shake the juice pitcher without the lid on it, and use the blender without the blade. Yikes but funny... and messy.

Bratwurst Potato Skillet
I was quite disappointed! The taste seemed very off to me. My 5yr old isn't picky and wouldn't eat it, my husband and I didn't like it. The potatoes were so crispy and good that I was eating them out of the skillet until I added the soy sauce and juice and spices. Then they became soggy and nasty. :( It looked so good and sounded so good but the only thing edible in the end was the brat pieces. I'm going to try to come up with some other spices/sauces for this. For now though it was a lot of wasted work and ingredients and I'm not sure what to do with the leftovers as we're on a budget.

Downeast Maine Pumpkin Bread
SO GOOD! I made muffins and one (larger than in the recipe) loaf of bread with this. Only thing I did was use 2 cups of sugar instead of 3. It did not need more!

Authentic Louisiana Red Beans and Rice
I loved it. My husband said it was good but wouldn't eat the leftovers... not too surprising. My daughter wouldn't touch it because of how it looked. Lol.
